Family Meal Plan
MONDAY
- Main Dish: – Mesquite Chicken– This one dish recipe is packed with flavor and quick and easy to make. It is LOADED with all the good stuff and a great dinner idea the whole family will enjoy!
- Side Dish:
- Baked Potato Wedges – I love these for the feel of french fries but made a little healthier and the kids love them because they are DELICIOUS!
- Broccoli Salad– this yummy cold salad can be prepared in advance and leftovers make great lunches for the week!
TUESDAY
- Main Dish: Beef Enchilada Soup– Perfect for the incoming fall weather, this soup is a hit with the grown up s and the kids.
- Side Dish:
- Toppings– Top it with your choice of avocado, sour cream, or crushed tortilla chips.
- Buttermilk Cornbread– If you have the time I 100% recommend this cornbread to go with the BBQ Chicken. SO GOOD!
WEDNESDAY
- Main Dish: Tomato Basil Pasta– This quick and easy pasta has the most AMAZING creamy, rich, tomato-y sauce! Add that to the fact it can be made in as little as 20 minutes and it is the perfect busy-night, mid-week kinda meal.
- Side Dish:
- Antipasto Salad– A great way to add some protein to this easy dinner!
- Garlic Roasted Vegetable Medley– My go to veggie side dish. So easy and so tasty!
- Pesto Cheese Bread– Can’t go wrong with cheesy bread!
THURSDAY
- Main Dish: BBQ Chicken Stuffed Baked Potatoes – Use leftovers from Monday, or grab a rotisserie chicken and use that! Cut and fluff freshly baked potatoes. Add chopped mesquite chicken breast, and top with additional cheese. Bake for 5-10 minutes or until the cheese is melted then top with sour cream, bacon, chives, and a drizzle of BBQ sauce.
- Sides:
- Salad- A simple green salad with ranch dressing can’t be beat! Use my homemade buttermilk ranch recipe for a special treat!
- Sides:
FRIDAY
- Main Dish: Skillet Ranch Chicken – This has been a family favorite for YEARS. Perfect for an easy Friday night, these “grown up chicken nuggets” are quick, healthy, and full of delicious flavor!
- Side:
- Smashed Potatoes– Crispy and delicious oven potatoes
- Fruit Salad- Fresh, simple, and delicious.
- Side:
- Dessert – Key Lime Cookies– These sweet and tangy cookies are SO ADDICTING! Be warned!
APPETIZER
- Black Bean and Corn Salsa– The great thing about this dip is not only is it delicious, but it makes a great healthy option to keep in the fridge and snack on all week.
