Heat a skillet over medium heat, then add in beef and onion. Cook until the beef is no longer pink, then drain excess fat.

Add in taco seasoning, green chiles, and black beans. Stir to combine, then remove the beef mixture from the heat and set aside.

In a large skillet, heat oil over medium-high heat. Once hot, lay a tortilla flat into the oil. Top with 3 tablespoons of the meat mixture, then layer with shredded cheese. Use tongs to fold the tortilla in half. Cook until golden brown, then flip and cook until evenly cooked on both sides.

Once both sides are golden-brown, remove the taco from the skillet and transfer to a paper towel-lined plate. Repeat with remaining tacos. To add toppings, gently pull apart each taco and stuff them with desired toppings.

Southwest Beef Fried Tacos
Ingredients
- 1 pound lean ground beef
- 1/2 onion, diced
- 1 tablespoon taco seasoning
- 1 can black beans drained and rinsed
- 1 can green chiles
- 2 cups cheddar cheese
- 24 small corn or flour tortillas
- 1/2 cup vegetable oil
Instructions
- Heat a skillet over medium heat. Add the ground beef and onion and cook, breaking apart with a spatula until no longer pink, about 4-6 minutes. Drain any excess fat.
- Add taco seasoning, green chiles, and black beans to the meat mixture and stir to combine. Remove from heat and set aside.
- In another large skillet, heat a couple of tablespoons of oil over medium high heat. Once hot lay a tortilla flat in the oil. Place about 3 tablespoons of meat mixture in the tortilla and top with cheese. Then use your spatula or tongs to fold the tortilla in half, taco style.
- Continue to cook on the bottom side 1-3 minutes, then flip and cook on the other side for 1-3 minutes or until both sides are golden brown and crispy.Remove tacos to a paper towel lined plate.
- Repeat until all tacos are cooked, adding oil to the skillet as needed. In my skillet I am able to cook about 4 tacos at a time, but this will vary based on the size of your skillet.
- Once tacos are done, serve hot. You can offer toppings that can be added by pulling apart the shell and stuffing them with desired toppings.
