Even better if you have a busy night ahead because you can prep the chicken and stuffing in the morning and come home to a delicious and filling meal!

Crockpot Chicken and Stuffing – The EASY Way!

After making this crockpot chicken and stuffing recipe, you will be amazed at how delicious it is. No one will believe it only took you 5 minutes to prep it!

When you have busy, long days, the last thing you want to do is come home and have to stand over a hot stove. You’re in luck because not only is this chicken and stuffing recipe tasty, but it is also filling. I use mixed vegetables in this recipe because that is really the ultimate kid friendly veggie. Who can resist veggies when they’re smothered in a creamy sauce and topped with stuffing mix?

Casseroles are always so comforting, but even more so when you can dump all of your ingredients into a crockpot and forget about it. Whether it’s a cold or rainy night, or you have a day full of running kids around, this is the perfect meal to come home to. And just like that, life feels easier when you can sit around your table and talk with your family.

In this section I am going to go through a few tips and tricks I use when making this recipe to get the absolute best and most delicious results.

Ingredients + Substitutions

  • Chicken breast – Boneless skinless chicken breast is what I generally use, but you can use chicken tenderloins or chicken thighs as long as you get boneless, skinless.
  • Cream of chicken soup – This is what brings out so much flavor. I use the original, but you can use light, low fat, healthy request, low sodium etc. NOTE – this is condensed soup and you do not add water to it. You can also substitute other flavors to switch it up like cream of mushroom soup, or cream of celery soup.
  • Sour cream – I use regular, but low fat sour cream or greek yogurt can be substituted and you will still get good results.
  • Chicken base – I tend to use and prefer Better Than Bullion. This adds richness to the dish. Dried bullion granules can also be used.
  • Stuffing mix– chicken flavored. This is the boxed chicken flavored stuffing that you can find in the dry goods area. I used Stove Top stuffing for this recipe, but feel free to use Pepperidge Farm or whatever brand your local store stocks.
  • Frozen mixed veggies – This keeps this recipe so simple and fast! You get green beans, carrots, and corn all with zero chopping. If you need to cater to picky eaters or special diets, you can use individual vegetables instead of the mixture.
  • Chicken broth – Broth really helps all of these ingredients melt together to create the creamiest texture. You can substitute with low sodium chicken broth, vegetable broth, or beef broth when in a pinch.

Recipe Step by Step

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make XXXXXXX.

Start by adding the cream of chicken soup, sour cream, chicken base, stuffing mix, and mixed vegetables in the crock pot.

Mix ingredients ingredients well until combined.

Lay chicken breasts on top of the soup mixture. Cook for 3-4 hours on high.

Once done, remove and shred the chicken. Serve warm.

Recipe Tips

  1. Less Mess – Save yourself the mess, and just combine the soup, sour cream, stuffing, chicken base, broth and veggies in the bowl of the slow cooker. Mix everything inside the crockpot, then nestle your chicken into the mixture. You can definitely place the chicken on top of the mixture, but I find that I like how it cooks together with the chicken juices and the stuffing mixture.
  2. Cooking time – I suggest doing low for 3.5 hours or high for 2.5 hours. This will vary based on the thickness of your chicken breast. In a slow cooker, you cook your chicken a less amount of time than you probably think. You don’t want dry and chewy chicken, so make sure to not cook for too long. If you do need more time, you can use chicken thighs and cook on low for 6-8 hours.
  3. Chicken broth can be added at the end of the cook time, after you have shredded your chicken. This will give you a juicer chicken stuffing so it just depends on how you prefer your stuffing.

Recipe Short Cuts

If you need to make this slow cooker chicken recipe, but are extra short on time, here are a couple ideas that can help make this recipe even faster!

  • Prep ahead – This recipe can be prepared through step 2 and refrigerated up to 48 hours in advance. When ready, place the mixture into the crockpot and cook.
  • Prepare as a freezer meal – This can be made into a freezer meal and frozen for up to 6 months in advance. See directions below for freezer instructions.

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Crockpot Chicken and Stuffing with Broccoli – Follow the recipe, but instead of using frozen mixed vegetables replace them with broccoli – frozen or fresh will both work.
  • Cheesy Chicken and Stuffing – Follow the recipe, but also add 1 cup of shredded cheddar cheese to the top or make it extra cheesy by using cheddar cheese soup in place of cream of chicken soup.
  • Layered Casserole – If you prefer your casserole to be more separated vs mixed together, you may enjoy this! Instructions are at the bottom of the FULL recipe card.

Freezer Meal Instructions

This crockpot chicken and stuffing recipe can easily be turned into a freezer meal to help make those long days easier on you! Follow the steps below and you can store this recipe in the freezer for up to 6 months.

  1. Combine the chicken breast, chicken soup, sour cream, chicken base, stuffing mix and mixed veggies into a freezer bag or airtight container.
  2. 24-48 hours before you are ready to cook your meal, thaw your freezer meal in the refrigerator.
  3. Once thawed, place your chicken and stuffing mixture into the crockpot and also add the chicken broth to combine.
  4. Continue to step 3.

What to Serve with Crockpot Chicken and Stuffing

Since this dish has the classic comfort flavors of chicken, cream, and stuffing, it will pair well with many of your favorite traditional side dishes. There are both classic options and some healthy options to keep it light.

Side Dish Ideas

  • Mashed Potatoes– This may be the most classic pairing and will have you feeling all the cozy Thanksgiving dinner vibes.
  • Cranberry Sauce– Use my quick homemade recipe, or get it in a can.
  • Classic Steakhouse Wedge Salad – This really is the ultimate side salad. The bleu cheese dressing is always a huge hit.
  • Easy Baked Macaroni and Cheese – Continue with the comfort theme and serve alongside macaroni.
  • Sautéed Mushrooms – These mushrooms have the most amazing garlic butter flavor!

Crockpot Chicken and Stuffing Leftovers

If you have leftovers after making this chicken and stuffing recipe, then it is your lucky day! They save and reheat well, and can make the start of another delicious dish.

To save leftovers, separate into meal sized portions and then place in an airtight container and store:

  • in the refrigerator for 3-4 days
  • in the freezer up to a month

All you need is 5 minutes to prep this meal. This recipe is full of creaminess making the most delicious home cooked meal. People will think it took you hours to make!

Ingredients 

  • 2 pounds chicken breast
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 tablespoon chicken base
  • 6 ounces stuffing mix- chicken flavored, (1 package)
  • 12 ounces mixed veggies
  • 1/2 cup chicken broth

Instructions 

  • Combine the cream of chicken soup, sour cream, chicken base, stuffing mix, and mixed vegetables in the crock pot and stir well.
  • Nestle the chicken breast down into the soup mixture.
  • Cook on low for 3.5-4 hours, or high for 2.5-3 hours. (Time may vary based on size and thickness of chicken breast.)
  • Once done, remove and shred the chicken, then stir it back into the stuffing mixture. Serve warm.
  • Optional- If you prefer your stuffing to be more moist, you can stir in up to 1/2 cup of chicken broth when you remove the chicken after cooking. Add as much as you want to bring it to the desired consistency.

Optional: I prefer to use the mixed method for this recipe, however if you like your stuffing to be separate from the filling, you can use the layered method instead. To make the Chicken and Stuffing casserole like, follow these instructions:
  1. Combine the cream of chicken soup, sour cream, chicken base, and mixed vegetables and stir well.
  2. Layer the crock pot in the following order:
    1. Chicken
    2. Soup mixture
    3. Stuffing
  3. Cook on low for 3.5-4 hours, or high for 2.5-3 hours. (Time may vary based on size and thickness of chicken breast.) 
Substitutions:
  • Chicken breast – You can use chicken breast (preferred), tenderloins or chicken thighs.
