Kale Salad Recipe
I know what you are thinking… Kale… I really don’t like it. But trust me when I say you will fall in love with this salad and you won’t even know you are eating Kale.
I really do love to cook, but I also love to eat out especially on the weekends. I love the fact that I don’t have to cook and I get to try a new mixture of flavors and get inspiration for my next recipe.
During the week I try and eat salads for lunch, but I find myself getting tired of the same salads. Although I don’t get tired of my arugula pear salad! That’s when I rely on my recipe inspiration from the weekend. One of the other things I love about eating out is that it gives me the chance to try new things and flavors that I haven’t experimented with as much myself. This recipe here was born from one of those moments!
I was out eating pizza with my family and I decided to order their Kale salad. After one bite, I knew as soon as I was home, I needed to re-create that salad. The thing that makes this salad the BEST is the homemade lemon vinaigrette dressing.

How to Make Kale Salad
This salad comes together quickly. The hardest part is mixing the lemon vinaigrette. I usually mix this dressing up and keep it in the refrigerator for the whole week. Toss Kale, Parmesan Cheese and your toasted almonds with the lemon vinaigrette. It’s as easy as that. Another great add on are my sweet and spicy pecans! Yes, this recipe is naturally gluten free. If you are using store-bought lemon vinaigrette check the labels to ensure the dressing is gluten free.
How long can I keep this salad in the refrigerator?
You can keep this salad in the refrigerator in an airtight container for up to 2-3 days. I feel like this salad is even better the second day because the flavors have marinated a little and the kale is softer.

Kale Salad
Ingredients
- 6 cups Kale, chopped
- 1/2 cup Almonds , toasted
- 1/2 cup Parmesan Cheese, shaved
- 1/4 cup Lemon Vinaigrette
Instructions
- Remove the stems from the kale and chop it into bite sized pieces and place in a large bowl. Toss the kale with the lemon vinaigrette to coat, and let rest in the refrigerator for 10-15 minutes to overnight.
- When ready to serve, toss salad greens again, then top with almonds and parmesan shavings and gently toss. Enjoy!
