Have you ever had Starbucks’ roasted red pepper and egg white bites? They’re savory and fluffy and so good–and a great source of protein, too! These Cottage Cheese Egg Bites are a riff on the egg bites recipe Starbucks made famous, except you can make them for a fraction of the price at home!

This recipe for egg bites with cottage cheese results in the tastiest eggs that are truly so great for meal prep! Stock your fridge with this egg bites recipe, then at breakfast time, just pop a couple in the microwave and serve with some fruit or a piece of toast.

Believe me–once you know how to make egg bites, breakfasts are going to be SO much easier (and tastier, too!)

What are Egg Bites?

Inspired by the egg white bites recipe Starbucks made famous, these Cottage Cheese Egg Bites are equally delicious!

Starbucks cooks their egg bites sous vide style, which involves vacuum-sealing the eggs then cooking them in a special water bath. But most of us don’t have sous vide equipment at home, and that’s okay! Baking these egg bites with cottage cheese in muffin tins results in similar fluffy, melt-in-your-mouth, tasty egg bites (for a fraction of the price!)

This Cottage Cheese Egg Bites recipe is as simple as promised! Just 5 ingredients for a family friendly breakfast.

In this section I am going to go through a few tips and tricks I use for how to make egg bites to get the absolute best and most delicious results.

Ingredients + Substitutions

Ingredients for Cottage Cheese Egg Bites
  • Eggs – You’ll need eight large eggs in total for six whole eggs and two egg whites.
  • Cottage cheese – For the best egg bites, cottage cheese is key! I prefer small-curd cottage cheese in my egg bites recipe.
  • Salt & pepper – Really helps to enhance all of the flavors.
  • Spinach – I grab packaged baby spinach. The leaves are smaller than traditional bunched spinach, and it’s pre-washed, which makes it easy!
  • Red bell pepper – You’ll want one red bell pepper, finely diced.
  • Green onions – Grab three green onions (also known as scallions) and dice them well.

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Spinach & Feta Egg Bites– Add a generous handful of crumbled feta cheese along with the cottage cheese.
  • Kale & Mushroom Egg Bites– Another popular flavor of egg bites at Starbucks! Sauté kale and button mushrooms and add them to your muffin cups instead of the spinach and peppers.
  • Bacon & Cheese Egg Bites– Add bacon bits and top with shredded cheddar.

Recipe Step by Step

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make Cottage Cheese Egg Bites.

Add the eggs, egg whites, cottage cheese, and salt and pepper to a mixing bowl.

Egg and cottage cheese are mixed together for cottage cheese egg bites.

Whisk together until the ingredients are well-incorporated.

Greens are added to the muffin tin for cottage cheese egg bites.

Grease 12 cups of a standard-size muffin tin and divide the spinach between the 12 cups.

Red pepper and scallions are added to the muffin pan for cottage cheese egg bites.

Add the diced red bell pepper and green onions to the muffin cups.

The egg mixture is poured into the muffin tins for cottage cheese egg bites.

Divide the egg mixture evenly between the cups.

Bake until puffy and the eggs are set.

Recipe Tips

  1. Mix the eggs and cottage cheese well – Use a whisk or egg beater and really mix until completely homogenous. Not only does this give you consistent egg bites, it helps add some air for a fluffier texture.
  2. Grease the muffin cups generously – This will help prevent the egg bites from sticking.
  3. Remove the egg bites from the tin after 2-3 minutes – After you’ve removed the egg bites from the oven and they’ve set for a couple of a minutes, run a knife around the edges of each egg bite and remove them from the tin to cool the rest of the way. This helps prevent them from getting stuck in the tins.

If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!

  • Buy prepared veggies – Buy the onions and red bell peppers already prepped, and grab a pre-washed bag of baby spinach. This way there’s no washing or chopping needed!
  • Make ahead and freeze – Not only are protein egg bites with cottage cheese awesome to have in the fridge at a moment’s notice, you can make them in bulk and keep them stocked in your freezer.

Freezer Meal Instructions

Making this Cottage Cheese Egg Bites recipe into a freezer meal is simple! Follow the steps below and you can store this recipe in the freezer for up to 6 months.

How to Freeze Cottage Cheese Egg Bites After Cooking

  1. Remove egg bites from the tin and allow them to cool completely.
  2. Line the egg bites up on a baking sheet and freeze.
  3. Transfer frozen egg bites to an airtight container or freezer bag, label, and return to the freezer until you’re ready to eat them.
  4. Thaw overnight in the fridge then warm in the microwave, oven, or air fryer.

These protein-rich egg bites are fluffy and delicious! They make the perfect healthy breakfast on the go and are such an easy meal prep breakfast idea.

Ingredients 

  • 8 large eggs, (6 whole eggs, 2 egg whites)
  • ¾ cup cottage cheese
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 3 ounces fresh spinach, chopped
  • 1 red bell pepper, finely diced (see note)
  • 3 green onions, finely diced
  • cooking spray

Instructions 

  • Preheat oven to 350˚F.
  • Whisk together the 6 whole eggs, 2 egg whites, cottage cheese, salt, and pepper.
  • In a greased muffin tin, place spinach, red pepper, and green onion in 12 cups. Pour the egg mixture over the vegetables.
  • Bake for 18-22 minutes or until the center of the eggs are set. Remove from oven and let set 2-3 minutes. Then run a knife around the edges of each muffin and remove them from the tin. Serve warm, or package individually to reheat for meal prep breakfast.
