Ingredients
8large eggs(6 whole eggs, 2 egg whites)
¾cupcottage cheese
¼teaspoonsalt
¼teaspoonground black pepper
3ouncesfresh spinachchopped
1red bell pepperfinely diced (see note)
3green onionsfinely diced
cooking spray
Instructions
Preheat oven to 350˚F.
Whisk together the 6 whole eggs, 2 egg whites, cottage cheese, salt, and pepper.
In a greased muffin tin, place spinach, red pepper, and green onion in 12 cups. Pour the egg mixture over the vegetables.
Bake for 18-22 minutes or until the center of the eggs are set. Remove from oven and let set 2-3 minutes. Then run a knife around the edges of each muffin and remove them from the tin. Serve warm, or package individually to reheat for meal prep breakfast.
