Burritos are a staple at our house. They are easy, quick, and the kids love them. They are also great for when friends come over because you can make as many or as little as you need. I shared my Smothered Chicken Burritos and they have been a reader favorite!
This recipe is exactly that. You can customize the fillings and toppings and you can scale the quantity up or down. You can quickly whip them up with canned filling ingredients or use our homemade refried beans recipe.

Ingredients + Substitutions
- Refried Beans – You can use canned refried beans or use my favorite homemade refried beans recipe!
- Salsa – Any of your favorite salsas can be used. This can be fresh or canned. Or, you can use any of the salsa recipes listed above.
- Sour Cream – This adds a delicious creamy texture and tang to the filling. I use full fat, but any kind of sour cream will work!
- Extra Large Tortillas – This recipe uses extra large tortillas, sometimes labeled add 12″ or burrito. You can always use smaller size tortillas to make more burritos or more snack size burritos.
- Red Enchilada Sauce – I love to use red enchilada sauce because of the toasty flavor but you could use green enchilada sauce too. A canned sauce will work here or you can make your own.
- Cheddar Cheese – Cheddar cheese is awesome in recipes because you get more cheese flavor with less cheese. Pepper jack cheese or a Mexican blend can be used in place of cheddar cheese if needed.
- Toppings – We like to top our refried bean burritos with cilantro, pico de gallo, and sour cream. You could top them with whatever you like though. Some other great options are shredded lettuce, olives, corn salsa, or anything else that sounds good!
Recipe Tips
- Roll carefully – Rolling a burrito isn’t the easiest of tasks. To do this place your fillings closer to one side of the tortilla, then fold over the opposite two sides while also folding over the edge of the tortilla nearest you, then tuck that long edge under the fillings, wrapping it. Keep rolling quickly forward to close the burrito.
- Make the filling how YOU want – If your kids like plain burritos, simply fill them with beans and cheese to make plain cheese and bean burritos. You could also amp up the protein by adding black beans or beef.
- Get creative with the toppings – Toppings can be anything you like. This can be keeping them plain with no toppings or adding more enchilada sauce or sour cream on top for smothered bean and cheese burritos.

Freezer Meal Instructions
Making this bean burrito recipe into a freezer meal is simple! Follow the steps below and you can store this recipe in the freezer for up to 6 months.
- Make the burritos as directed.
- Let them cool completely, then cover with plastic wrap. Place into a plastic bag or wrap in a second layer of plastic wrap.
- Store in the freezer for up to 6 months. When ready to eat, place back in the oven for 30 minutes until heated through.

Baked Cheesy Bean Burritos
Ingredients
- 2 cans refried beans
- 1/2 cup salsa
- 1/2 cup sour cream
- 4 extra large flour tortillas, burrito size
- 10 ounces red enchilada sauce, (1 can)
- 1.5 cups sharp cheddar cheese
Garnish (optional)
- chopped cilantro
- pico de gallo
- sour cream
Instructions
- Preheat the oven to 400˚F.
- In a large bowl, combine the refried beans, sour cream, and salsa.
- Lay a tortilla flat and add one quarter of the bean mixture to the center of the tortilla. Add about 1/3 cup of cheese on top.
- Fold the ends of the tortilla in, then roll it up burrito style. Place in a large casserole dish (9×13 inch) that has been sprayed with cooking spray or oiled.
- Repeat until all the burritos are rolled and in the casserole dish.
- Pour the enchilada sauce over the burritos and then top with any remaining cheese.
- Bake on the lower oven rack for 20-25 minutes or until piping hot. Remove from oven and garnish as desired.
