Baked Bean Burrito – The EASY Way!

Burritos are a staple at our house. They are easy, quick, and the kids love them. They are also great for when friends come over because you can make as many or as little as you need. I shared my Smothered Chicken Burritos and they have been a reader favorite!

This recipe is exactly that. You can customize the fillings and toppings and you can scale the quantity up or down. You can quickly whip them up with canned filling ingredients or use our homemade refried beans recipe.

Why I LOVE this recipe!

  • Quick & Easy – These baked bean and cheese burritos come together in 30 minutes and are totally hands off once they are in the oven!
  • Scalable – You can easily double or even triple this recipe to feed a crowd. You can also cut the recipe in half or change the tortilla size to make less.
  • Great for feeding a crowd – Because it is so easy to make more of these burritos, they are great for serving to a crowd and even better for a last minute crowd pleaser.
  • Customizable – While we love the filling with refried beans, sour cream, and salsa, you can customize the filling to meat your families taste buds.

What to Serve with Bean and Cheese Burritos

Since this dish has the classic Mexican flavors, it will pair well with many of your favorite Mexican side dishes. There are both classic options and some healthy options to keep it light.

Side Dish Ideas

  • Easy Mexican Rice
  • Mexican Roasted Vegetables
  • Mexican Street Corn Casserole
  • Chips and salsa- Pick your favorite
    • Homemade salsa
    • Corn salsa
    • Mango Avocado Salsa (a personal favorite!)
    • Pineapple Salsa

You can choose one or add a few sides to make a wholesome, well rounded dinner.

Topping Ideas

One of my favorite parts of these hot bean burritos is layering on all the toppings. You can choose to keep it simple, or make it quite an elaborate creation. If you have company, especially a crowd of hungry teenagers.

  • Sour cream
  • Shredded lettuce
  • Pico de gallo
  • Sliced jalapenos
  • Jalapeno Ranch dressing
  • Guacamole
  • Diced onions

Recipe Notes

This bean burrito recipe is as simple as promised! Just 30 minutes for a family friendly meal.

In this section I am going to go through a few tips and tricks how to make Baked Bean Burritos to get the absolute best and most delicious results.

Make sure to scroll to the bottom for the FULL recipe card.

Ingredients for smothered burritos including tortillas, cheese, enchilada sauce, salsa, sour cream, and refried beans.

Ingredients + Substitutions

  • Refried Beans – You can use canned refried beans or use my favorite homemade refried beans recipe!
  • Salsa – Any of your favorite salsas can be used. This can be fresh or canned. Or, you can use any of the salsa recipes listed above.
  • Sour Cream – This adds a delicious creamy texture and tang to the filling. I use full fat, but any kind of sour cream will work!
  • Extra Large Tortillas – This recipe uses extra large tortillas, sometimes labeled add 12″ or burrito. You can always use smaller size tortillas to make more burritos or more snack size burritos.
  • Red Enchilada Sauce – I love to use red enchilada sauce because of the toasty flavor but you could use green enchilada sauce too. A canned sauce will work here or you can make your own.
  • Cheddar Cheese – Cheddar cheese is awesome in recipes because you get more cheese flavor with less cheese. Pepper jack cheese or a Mexican blend can be used in place of cheddar cheese if needed.
  • Toppings – We like to top our refried bean burritos with cilantro, pico de gallo, and sour cream. You could top them with whatever you like though. Some other great options are shredded lettuce, olives, corn salsa, or anything else that sounds good!
Step by step of making the burritos step 1 mix the filling ingredients step 2 wrap the burritos step 3 lay them in the pan step 4 cover with toppings and bake.

Recipe Tips

  1. Roll carefully – Rolling a burrito isn’t the easiest of tasks. To do this place your fillings closer to one side of the tortilla, then fold over the opposite two sides while also folding over the edge of the tortilla nearest you, then tuck that long edge under the fillings, wrapping it. Keep rolling quickly forward to close the burrito.
  2. Make the filling how YOU want – If your kids like plain burritos, simply fill them with beans and cheese to make plain cheese and bean burritos. You could also amp up the protein by adding black beans or beef.
  3. Get creative with the toppings – Toppings can be anything you like. This can be keeping them plain with no toppings or adding more enchilada sauce or sour cream on top for smothered bean and cheese burritos.

Recipe Short Cuts

If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!

  • Use pre-made – Using canned refried beans, canned salsa, and canned enchilada sauce makes this bean burrito recipe SUPER quick!
  • Freeze – You can make these burritos as directed and freeze them. This makes for an even quicker dinner.

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Cheesy Bean and Rice Burrito – This is a great way to make these cheese and bean burritos more filling. Simply add some rice (could be white, brown, or Mexican) to the filling mixture.
  • Black Bean Burrito– If you don’t have refried beans on hand, you can simply rough mash black beans to mix into the filling for another variations of this easy bean burrito recipe.
  • Breakfast Bean Burrito – I love having breakfast burritos! I just add some scrambled eggs into the filling mixture. It can be tasty to add the salsa to the eggs when cooking them.
  • Chicken and Bean Burrito – For this burrito, you can mix in any plain or Mexican flavored chicken you have. This could be frozen, leftover, or rotisserie.

Making this bean burrito recipe into a freezer meal is simple! Follow the steps below and you can store this recipe in the freezer for up to 6 months.

  2. Let them cool completely, then cover with plastic wrap. Place into a plastic bag or wrap in a second layer of plastic wrap.
  3. Store in the freezer for up to 6 months. When ready to eat, place back in the oven for 30 minutes until heated through.
