This Apple Fritter Breakfast Casserole is loaded with apples, cinnamon roll bites, and of course glaze!  It is every bit as good as you might imagine! This is perfect for a breakfast, brunch, potluck or holiday celebration.  With just a few simple ingredients, this casserole comes together in minutes and feeds a crowd.

Apple Fritter Breakfast Casserole Recipe

Someone way wiser than me once said that “Necessity is the mother of invention,” and that my friends is how this casserole came to be.  Life has been so busy and I realized I was supposed to show up to a brunch with a dish in hand… like in the morning.  So I took inventory and decided we would make it work with what I had since there was 0 time for a trip to the store.

I am super excited to share this with you because everyone at the brunch were raving about it (insert blushing here) and I got multiple requests for the recipe.  I figured I better figure out what exactly I put in it and give it a name so I could properly document it and share with you.

Apple Fritter Breakfast Casserole is just too easy and delicious!  It is perfect for taking to a potluck since it easily feeds 10-12.  I think it would also be a really great addition to a Christmas morning breakfast.  With the delicious flavors of cinnamon rolls, along with the flavorful apples it really is perfect for the season, and you won’t have to spend all morning in the kitchen because you can have this from fridge to oven in about 10 minutes.

Apple Fritter Breakfast Casserole Ingredients

Ingredients

  • Cinnamon
  • Pillsbury Cinnamon Rolls- I use the regular roll, classic flavor (sometimes labeled Cinnabon) with 8 rolls in it.  Grands might work too, but they are made slightly differently where they are actually rolled with cinnamon in between the layers so I think the regular ones work better.
  • Apple pie filling- You can get light or regular for this.  I have been asked a few times, so I thought it worth mentioning, although the pie filling is already sweet, it really does need the extras below to make the casserole more caramel like and bring it all together.
  • Butter, melted
  • Brown sugar

With just 5 simple ingredients, you are going to love how this dish comes together so quickly!

Recipe Step by Step

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make Apple Fritter Casserole.

How to Make Apple Fritter Breakfast Casserole: Step 1 - cut cinnamon rolls

Preheat the oven to 375˚F. Chop cinnamon rolls

How to Make Apple Fritter Breakfast Casserole: Step 2 - combine ingredients into a bowl

Place the cinnamon rolls, apples, melted butter, sugar and cinnamon in a bowl and mix them until everything in combined and the cinnamon rolls are coated in the apple mixture.

How to Make Apple Fritter Breakfast Casserole: Step 3 - place mix ingredients into baking dish

Spray a large casserole dish with cooking spray. Pour the cinnamon rolls mixture into the dish evenly distribute in the dish.

How to Make Apple Fritter Breakfast Casserole: Step 5

Cook in middle rack of oven for 40-50 minutes. Drizzle the glaze from the cinnamon rolls over the top of the casserole.  Serve warm and enjoy!

How to Serve Apple Fritter Breakfast Casserole

This casserole is really great to add a little sweetness to your breakfast or brunch. Since it is quite sweet and provides a lot of ooey-gooey goodness, it pairs well with more traditional savory breakfast items. You might enjoy my bacon (see my easy trick on how to make bacon in the oven here!), eggs, fresh fruit, and a cup of coffee or tea.

When you serve up this breakfast casserole, make sure to have a big serving spoon as the casserole naturally divides so you don’t need to cut it with a knife but rather just scoop it out.  You will also want to have forks and napkins because it is delicious, but it can also be a little messy to eat if you aren’t careful.

What to do with Apple Fritter Casserole leftovers

This casserole is so good there is a good chance there won’t be a crumb left, but just in case there is, here is what you can do with the leftovers.

You can store this casserole both in the refrigerator or the freezer after baking.  It reheats well from either and can also be baked and used for breakfast meal prep so that you can have a hot breakfast on the go easily.

Store leftovers in an airtight container,  I use a ziplock bag often, and place in the refrigerator for 3-4 days or in the freezer for up to a month.

To reheat, remove a slice and microwave until hot.

This simple breakfast casserole is the perfect blend of apples, cinnamon and breakfast bread to create a mouth watering morning treat.  Apple Fritter Breakfast Casserole makes the perfect dish to bring to a breakfast,brunch, or special occasion, and even a great addition to a Christmas morning breakfast.

Ingredients 

  • 2 cans, 12.4 oz Pillsbury Cinnamon Rolls
  • 1 can, 20 oz apples
  • 1/2 cup butter, melted
  • 1/3 cup brown sugar
  • 2 tsp cinnamon

Instructions 

  • Preheat the oven to 375˚F.
  • Chop the cinnamon rolls into 6-8 pieces each. Open the can of apples and chop them up into small bite sized pieces.
  • Place the cinnamon rolls, apples, melted butter, sugar and cinnamon in a bowl and mix them until everything in combined and the cinnamon rolls are coated in the apple mixture.
  • Spray a large casserole dish with cooking spray and then pour the cinnamon rolls and apples into the dish and place in the middle rack of the oven and bake for 40-50 minutes or until cooked through.
  • Drizzle the glaze from the cinnamon rolls over the top of the casserole.  Serve warm and enjoy!

Overnight Breakfast Casserole Directions

To make this casserole the night before, prepare recipe as directed then cover then, cover casserole dish with plastic wrap or lid, and refrigerate. The next morning, remove the dish, uncover and bake as directed adding 5-10 minutes to the cooking time.

    I made this for a staff breakfast. I prepared it the night before and covered with foil. Baked in the morning. It said to bake for an extra 10 minutes, but the top burned a little. It was okay on the bottom though. It was very good. Everyone asked for the recipe. I will definitely be making this again.

      Do you think this could be baked the day before and warmed up in the microwave oven?

        You can definitely reheat it. Bread does start to take on a tougher texture when microwaved though so be very careful. Alternately, you could prepare the dish the night before but not bake it, and just bake in the morning. It might just need a couple of extra minutes if you put it in straight from the fridge.

      I used a 2 qt corning ware dish in the photo. You can use most larger casserole dishes. I have had luck making it in advance, however it will need to bake longer since it will be colder going into the oven.

    I’ve made this multiple times for work appreciation breakfasts and it’s a hit every time! I’ve now tried it with cherries and blueberries in place of apples and all are equally delicious. I still want to try peaches! I make it the night before and warm it in my roaster oven the next morning and it’s amazing!

      I want to make this delicious looking treat for a breakfast potluck at work, is this dish still good if it’s not warm? It might be 3-4 hours before the potluck will start.         Hi I just made this the night before but covered it up tightly. It came out perfect. Just try not to get any condensation (water) in it in any way. I took it out about 45 minutes to get to somewhat room temp. Not where the biscuits become mush. I done it, tried it, liked it both way. ?
