Ingredients 

  • 1½ pounds chicken breast, diced into 1 inch cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 teaspoons toasted sesame oil
  • 1 cup rice, I used jasmine
  • 1½ cups chicken broth
  • 12 ounces frozen peas and carrots, thawed

For the Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/2 cup sweet chili sauce
  • 1 tablespoon sriracha, or other hot sauce
  • 1 tablespoon lime juice

Garnish (optional)

  • Sliced green onions

Instructions 

  • Preheat oven to 375˚F.
  • Make the bang bang sauce by whisking together the mayonnaise, sweet chili sauce, sriracha, and lime juice.
