Week 384

Monday
- Main Dish: Sheet Pan Sausage and Tortellini – If you know me, you know I will never turn down a sheet pan dinner! This one has cheesy tortellini, savory sausage and veggies all baked together. And hello, barely any dishes!
- Side Dish:
- Garlic Bread – My family would be very disappointed if I skipped this one on a pasta night!
- Sautéed Green Beans – A quick veggie side that takes just minutes and works with just about anything.
Tuesday
- Main Dish: Beef Enchilada Skillet – All the cheesy, saucy enchilada flavors we love without having to roll a single tortilla. This one is always a hit at my house!
- Side Dish:
- Corn Salsa – This is THE Chipotle corn salsa recipe that they shared on TikTok when we were all quarantined in 2020! I still make it all the time and it is so good on everything.
- Side salad with jalapeno ranch – Family favorite! And if your kids aren’t usually excited about salad, just wait until you put this ranch on it.
Wednesday
- Main Dish: Creamy Lemon Orzo with Chicken – This comes together in one pan, which means I am already very interested!
- Side Dish:
- Burrata Caprese Salad – Fresh tomatoes, creamy burrata and basil. Basically, summer on a plate and it takes hardly any effort.
- Garlic Roasted Veggies – If you have veggies hanging out in the fridge that need a purpose, send them here! We love zucchini, broccoli and onion, but pretty much anything works.
Thursday
- Main Dish: Pulled BBQ Chicken Sliders – BBQ chicken piled onto soft slider buns? Yes please. These are easy enough for a busy night and my kids can grab one whenever they’re ready to eat.
- Side Dish:
- Easy Baked Macaroni and Cheese – For a hearty dinner, pair your sliders with a classic! This was my grandma’s recipe and it never gets old.
- Broccoli Cauliflower Salad – A crunchy side to balance out all that BBQ goodness. Plus, you can make it ahead and check one more thing off your list.
Friday
- Main Dish: Chimichurri Flank Steak – Fire up the grill because Friday steak night is happening! Drizzle that homemade chimichurri all over the top and prepare yourself because WOW.
- Side Dish:
- Cilantro Lime Rice – The lime flavor complements the chimichurri steak so well! This is also a great one to make extra of because leftovers are never a bad thing.
- Pineapple Jalapeño Salsa – Summer is almost over so I’m trying to use all my yummy summer recipes before it’s too late! The sweet pineapple with that little jalapeño kick is SO good with steak.
- Dessert – Chocolate Chip Pudding Cookies – Everytime I share this on social media y’all go bananas. These disappear FAST at my house, so you might want to hide a few for yourself.
Appetizer
- BBQ Smokies – Put these out and don’t expect there to be leftovers.
