Family Meal Plan

Monday
- Main Dish: Loaded Santa Fe Chicken Bake – This is a throw-it-in-the-oven dinner that comes out bubbling, cheesy, and packed with flavor. I’ve made this on busy nights and for company and it’s always a winner!
- Side Dish:
- Mexican Rice – We love this one, but honestly use whatever rice you have and pile that chicken right on top. Easy and filling.
- Mexican Cornbread – You are going to want this for scooping up every last bite. I always grab “just one more piece.”
- Toppings – Load it up with all the good stuff like sour cream, guacamole, pico de gallo, etc.
Tuesday
- Main Dish: Million Dollar Ravioli – The name is not dramatic. It really is that good! Husband approved, kid approved, everyone went back for seconds.
- Side Dish:
- Burrata Arugula Salad – This makes dinner feel a little extra without any extra effort.
- Garlic Cheese Bread – Cheesy, crispy, and gone before the ravioli is even served 😅
Wednesday
- Main Dish: Slow Cooker Tomato Soup – Throw everything in and let it do its thing. By dinner time it feels like you planned ahead even if you didn’t.
- Side Dish:
- Brisket Grilled Cheese – This is not your average grilled cheese. It feels a little over the top in the best way and my family gets very excited about this one.
- Italian House Salad – Quick, fresh, and balances everything out without making more work for you.
Thursday
- Main dish: Pineapple Salsa Chicken – This one is bright, flavorful, and just fun to eat because it is so juicy and full of flavor!
- Side Dish:
- Side Salad with Jalapeno Ranch – I will never stop talking about this dressing. My kids will eat anything if it’s covered in this.
- Sautéed Peppers and Onions – Simple, quick, and I always throw these on the plate or right on top of the chicken.
Friday
- Main Dish: Asian Turkey Meatballs – These are always a hit. The leftovers are perfect for lunches (especially weekend lunches!) and somehow taste even better the next day.
- Side Dish:
- Sriracha Coleslaw – My favorite way to serve this is putting the meatballs and sauce on a bed of rice, adding the spicy slaw, then spooning the meatballs and sauce over the top. It tastes even better than take out!
- Kid Friendly Broccoli – We call this glow-up broccoli and I stand by that. Regular broccoli could never.
- Dessert – Blueberry Breakfast Cake – I’ve had this for breakfast, dessert, and a random afternoon snack. No one in my house questions it.
- White Chocolate Macadamia Nut Cookies – I didn’t want to deprive you of a true dessert! Big, bakery-style cookies that disappear almost immediately.
Appetizer
- Cajun Chicken Bites – These are perfect for grabbing a few bites while dinner is cooking or for a movie night. My family hovers around these and I have to tell them to save some for everyone else!
