Family Meal Plan

Monday
- Main Dish: Smothered Chicken and Rice – I had to double this the last time because everyone went back for seconds. It’s simple, filling, and a dinner that works on a busy night.
- Side Dish:
- Oven Roasted Green Beans – Throw them in the oven and forget about them for a bit. They come out perfect every time!
- Mashed Potatoes – Yes we already have rice and yes I am still making mashed potatoes. No one will question it.
Tuesday
- Main Dish: Baked Chicken Tostadas – Tostada Tuesday just feels right. Everyone builds their own and suddenly dinner is fun and quiet for five minutes.
- Side Dish:
- Mexican Roasted Veggies – Easy way to add some color to the plate and they roast while everything else is going.
- Mexican Street Corn Casserole – Five minutes of prep and it tastes like you tried way harder. I never have leftovers of this one.
Wednesday
- Main Dish: Classic Sausage and Peppers – This is one of my go-to meals when I need dinner done fast. One pan, simple ingredients, and my husband is always very happy when this is on the menu.
- Side Dish:
- Hoagies – Pile everything into a toasted roll and it instantly feels like you ordered out. My kids think this is the best idea ever.
- Italian Quinoa Salad – If you want something a little lighter on the side, this balances everything out really well and keeps you full.
Thursday
- Main dish: Hot Honey Chicken – Sweet, a little spicy, and a meal that has everyone asking what you put on it. This one gets attention!
- Side Dish:
- Buttermilk Cornbread – Warm cornbread with this is just a yes. I always go back for one more piece.
- Side Salad with Homemade Ranch – Make extra ranch and suddenly your kids are eating vegetables without a single complaint. I don’t ask questions.
Friday
- Main Dish: 30 Min Beef Ramen Stir Fry – Fast, flexible, and my kids think ramen for dinner is like hitting the jackpot. I clean out the fridge and find veggies that need to be eaten and call it a win.
- Side Dish:
- Cucumber Tomato Salad – Cold, fresh, and exactly what you want next to a hot stir fry. Takes a few minutes and makes the whole plate feel balanced.
- Brown Butter Broccoli – We call this the glow-up broccoli! Once you make it this way, plain broccoli is just not it anymore.
- Dessert – Lemon Meltaway Cookies – It’s been awhile since we’ve made these little bite sized pieces of heaven. These cookies seriously melt in your mouth!
Appetizer
- Garlic Parmesan Wing Sauce – Four ingredients and five minutes and you’ll have something everyone is hovering around. I’ve used this on wings, chicken, you name it. It never misses!
