Meal Plan – Week 333

Monday
- Main Dish: Sheet Pan Steak Fajitas – Move over taco night, these fajitas are even easier! Toss everything on one pan and dinner practically makes itself (plus, way fewer dishes to wash!).”
- Side Dish:
- Chipotle Cilantro Lime Rice – Better than takeout! This Chipotle-style cilantro lime rice is fresh, zesty, and the easiest side to pile under your fajitas.
- Mexican Caesar Salad – Crisp, crunchy, and full of flavor. This brings the perfect cool and creamy balance to your fajita night.
Tuesday
- Main Dish: Southwest Grilled Chicken – This chicken is juicy, smoky, and so easy to throw on the grill. I always make extra because the leftovers save my sanity – they’re perfect for wraps, salads, or tomorrow’s lunch boxes.
- Side Dish:
- Crock Pot Black Beans – Throw them in earlier in the day and forget about them until dinner. They’re hearty, kid-approved, and make the meal feel complete without any extra effort.
- Sautéed Peppers and Onions – These cook up in minutes and add the perfect pop of flavor and color to your plate. The best part? Even my kids will eat them when they’re tucked next to that juicy chicken.
Wednesday
- Main Dish: Crockpot Sweet Chili Meatballs – My family LOVES these! Sweet, tangy, and simmered to perfection while you run a hundred other directions – these meatballs basically cook themselves. Meatball night should just be a thing every week.
- Side Dish:
- Lemon Rice – Bright and zesty, it’s the best way to soak up all that saucy goodness.
- Oven Roasted Veggies – Toss ’em on a pan, pop in the oven, and let them do their thing – doesn’t get much easier.
Thursday
- Main Dish: Southwest Chicken Bowl – Leftovers never looked this good – use Tuesday’s chicken and just add toppings and suddenly it’s a whole new dinner win!
- Side Dish:
- Black Bean Corn Salsa – The easiest scoopable side that everyone piles on their plate.
- Cilantro Lime Rice – Cook once, eat twice – rice is the base that ties your whole bowl together.
Friday
- Main Dish: Mexican Spinach Chicken Bake – Cheesy goodness, lots of veggies and such an easy way to get some veggies snuck into everyone’s bellies.
- Side Dish:
- Borracho Beans – Flavor-packed beans that are creamy and taste even better the next day.
- Side salad with ranch dressing – Gotta keep it balanced, and ranch makes everything kid-approved!
- Dessert – Key Lime Cookies – These cookies are seriously some of the best I have ever made. It’s the cookie recipe everyone asks for!
Appetizer
- Chicken Bacon Ranch Sliders – I love bite-sized appetizers and these rarely last very long.
