Family Meal Plan

Monday
- Main Dish: Chicken and Potatoes with Green Beans– Start your week off with a slow cooker meal! This is an easy comfort meal and you don’t even have to make a side dish because everything cooks together.
- Side Dish:
- Kale Salad– You don’t necessarily even need a side dish, but if you want one this is great.
- Easy dinner rolls– Rolls just seem necessary when you’re having a comfort meal.
Tuesday
- Main Dish: Panko Chicken with Honey Drizzle– I love this hearty dish! The method I use makes the chicken tender AND juicy, but the outside stays nice and crispy. You’ve gotta try it!
- Side Dish:
- Broccoli Crunch Salad– Sweet, crunchy and always a crowd favorite. This salad is as beautiful as it is tasty.
- Garlic Smashed Potatoes– These are oven baked so they get crispy and taste like a french fry.
Wednesday
- Main Dish: Italian Grinder Sliders– My family LOVES these! The rolls are filled with layers of deli meat and melted cheese, but it’s the savory glaze that will change your life!
- Side Dish:
- Easy Pasta Salad– This is a great way to pack even more veggies into your meal. Toss the pasta with your veggies and your favorite Italian dressing.
- Veggies and Dips– Pair your veggies with homemade ranch, blue cheese, or creamy Italian dressing. I use whatever I have on hand like carrot sticks, celery, tomatoes, or bell peppers. Use whatever you like though!
Thursday
- Main Dish: Oven Baked Salsa Chicken– This one dish wonder only has 4 ingredients you can have it prepedp and in the oven in about 5 minutes.
- Side Dish:
- Sautéed Peppers and Onions– Keep it simple by serving these as a side.
- Easy Mexican Rice– Can’t think of anything better to serve with salsa chicken!
Friday
- Main Dish: Blackened Fish Filets– My method keeps your fish juicy and tasty.
- Side Dish:
- Brussels Sprouts– Just 4 basic ingredients for perfectly crisp and delicious brussels sprouts.
- Garlic Bread– The best way to make garlic bread!
- Dessert – Soft and Thick Sugar Cookies– Get the family together and make these big, thick, bakery style cookies. Make sure to add buttercream frosting!!
Appetizer
- Chipotle’s Offical Corn Salsa– In 2020 this recipe went viral when Chipotle shared a video. Between their viral video and me asking employees questions I was able to put together THE recipe that tastes just like the restaurant. I also have some tips for you to customize and tweak it if you need to.
