Family Meal Plan 280

Monday

  • Main Dish: ​Firecracker Chicken Meatballs – Sweet and spicy little bites that are on the table in just 30 minutes from start to finish.
  • Side Dish:
    • Perfect Green Beans – This is my favorite way to make green beans.
    • Cilantro Lime Rice – You can also do steamed white rice, but the lime rice is a favorite when paired with firecracker chicken meatballs.

Tuesday

  • Main Dish: Caprese Flatbread with Chicken – This is a must make for a pizza night. The pesto and balsamic glaze are winners, but your favorite part might be my hack for making the pizza even faster!
  • Side Dish:
    • House Salad – A crisp green salad is always a good idea. Serve with your favorite dressing or try this blue cheese dressing.
    • Garlic Roasted Vegetables – The smell of perfectly crisp, garlic veggies is the best dish to pair with your flatbread.

Wednesday

  • Main Dish: French Onion Pot Roast – I love this roast because it’s so versatile, only requires 4 ingredients, and the result is tender, juicy shredded beef. *Make sure to save leftovers for Friday.*
  • Side Dish:
    • Baked Macaroni and Cheese – My Grandma made the BEST macaroni and I’m sharing it with all of you, so make sure to make it!
    • Homemade Buttermilk Cornbread – You can feed your whole family with a pan of this and your pot roast!

Thursday

  • Main Dish: Carnitas Bowls – Everyone will love this recipe because they get to choose their own toppings!
  • Side Dish:
    • Black Beans – It doesn’t get much easier than this recipe.
    • Pico de gallo – The easiest pico!
    • Guacamole
    • Jalapeno Ranch – Drizzle this right on top of your bowls.

Friday

  • Main Dish: Loaded Baked Potatoes – This is the perfect recipe to use up your leftover pot roast from Wednesday.
  • Side Dish:
    • Kale Salad – ​Because of the parmesan and easy lemon vinaigrette, this salad is hard to resist which is why I make it on repeat.
    • Roasted and Glazed Carrots – You’ll never look at a carrot the same after you make them this way…they are the ultimate comfort carrot!
  • Dessert – Cornflake Cookies – The crunch of the cornflake in this cookie will blow your mind. These are perfection!

Appetizer

  • Turkey Club Sliders – Paired with a side, these are perfect as a meal, but also amazing as an appetizer. The little hand-held bites are great to just grab ‘n go.
