Meal Plan – Week 258

Monday
- Main Dish: Mexican Style Chicken Thighs – These have a delicious, bold Tex-Mex flavor you will love.
- Side Dish:
- Mexican Street Corn Casserole – I love having an excuse to make this dish because of how yummy it is.
- Easy Mexican Cornbread – Sometimes cornbread is just cornbread, but THIS is anything but that – it’s irresistible!
Tuesday
- Main Dish: Sausage Pesto Penne – This sheet pan meal will be on your table and ready to eat in just 30 minutes. It is packed with protein and delicious veggies so if you don’t have time to make a side, don’t worry about it!
- Side Dish:
- Caprese – You can’t go wrong serving this fresh, classic salad.
- Garlic Bread – If you haven’t made this before, get ready to make it every week because it is a crowd favorite. 🙂
Wednesday
- Main Dish: Oven Baked Salsa Chicken – This one dish wonder only has 4 ingredients and takes as little as 5 minutes to prep and get in the oven.
- Side Dish:
- Sautéed Peppers and Onions – Keep it extra simple by serving these as a side.
- Easy Mexican Rice – What compliments Salsa Chicken more than yummy rice?
Thursday
- Main Dish: Crockpot BBQ Chicken – 3 ingredients is all you need to get you to dinner in no time. I love a good crock pot recipe because it does all of the work for you!
- Side Dish:
- Deviled Egg Potato Salad – This has classic American flavors and will be perfect with the BBQ chicken.
- Southern Coleslaw – Full of flavor and comes together so quickly.
Friday
- Main Dish: Ginger Sesame Ground Chicken Stir Fry – Easy, kid-friendly and one pan. What are you waiting for?
- Side Dish:
- Asian Cucumber Salad – If you really want to be ahead of the game, prep this ahead of time so that it’s already good to go the night you need it.
- Steamed Rice – White or brown rice would be great to soak up the stir fry sauce. Quinoa would also work.
- Sautéed Green Beans – Adding a splash of soy sauce, chili sauce, or garlic makes this a perfect side.
- Dessert – Soft and Thick Sugar Cookies – Get the family together and make these big, thick, bakery style cookies. You can make them Easter or Spring themed by using food coloring with my favorite buttercream frosting!!
Appetizer
- Green Chile Cheddar Dip – This ooey gooey dip is great for dipping chips and veggies in for a hearty snack.
