Family Meal Plan
Monday
- Main Dish: Crispy Chicken w Honey – Less than 10 minutes of prep and about 15 minutes of bake time – yes, please!
- Side Dish:
- Mashed Potatoes– When it comes to mashed potatoes, this is my go to recipe.
- Mashed Cauliflower – Or keep it light with this – you won’t even miss the potatoes! *Read the tips on how to get them extra potato like.
- Kale Salad with Sweet and Spicy Pecans – Add a delicious crunchy bite of pecans to a kale salad tossed with parmesan cheese and a lemon vinaigrette.
Tuesday
- Main Dish: Beef Enchilada Meatballs – Serve these alongside rice or pasta. You could even stuff them into tortillas or taco shells for an easy Mexican-inspired dinner. *Make extra and have leftovers on Thursday*
- Side Dish:
- Cilantro Lime Rice – This tastes like Chipotle, but I think it’s actually better.
- Mexican Street Corn Casserole – Are you ready for your new go to side dish? Because this might be it!
Wednesday
- Main Dish: Crockpot Cranberry Chicken –This is a great, cozy crock pot meal! Especially during the holiday season.
- Side Dish:
- Crockpot Corn Casserole – Why wait to eat this during a fancy holiday dinner when you can make it in between?! It’s soooo delicious.
- Dinner Rolls –Homemade rolls might intimidate you, but these don’t even need yeast. Try them!
Thursday
- Main Dish: Enchilada Meatball Bowls – Using your leftover enchilada meatballs from Tuesday, you can serve the leftover meatballs on top of rice or quinoa with some black beans, diced avocado, and a dollop of sour cream.
- Side Dish:
- Black Beans – No one will believe you doctored up some canned beans!
- Sour Cream
- Pico de Gallo – The fresh tomatoes in this pico go well with the meatball bowls.
- Diced Avocado
Friday
- Main Dish: McMuffin Breakfast Casserole – This is quick to make, but can easily be prepared ahead of time, too. We love breakfast for dinner!
- Side Dish:
- Apple Cinnamon Muffins – These muffins balance out the hearty casserole with sweet and savory flavors.
- Oven-Cooked Bacon – You can’t go wrong with a classic side of crispy bacon!
- Dessert — Cinnamon Glazed Butter Cookies – These melt in your mouth and have the most wonderful holiday flavor!
