Family Meal Plan
Meal Plan – Week 232

Monday
- Main Dish: Ginger Sesame Ground Chicken Stir Fry – Top 3 things I love about this – easy, kid-friendly and one pan. One pan meals are my favorite!
- Side Dish:
- Asian Cucumber Salad — This can be prepared in advance which makes for an even faster side dish the night of dinner.
- Sriracha Slaw — This cabbage has a little kick if you are into that!
- Steamed Rice — White or brown rice would be great to soak up the stir fry sauce. Quinoa would also work.
Tuesday
- Main Dish: Garlic Butter Meatballs — These ground turkey meatballs are so delicious! No one will believe these only took you 10 minutes because they’re so full of flavor.
- Side Dish:
- Lemon Rice — This rice goes perfectly with the meatballs.
- Brown Butter Broccoli — My family thinks these are the best way to eat broccoli.
- Noodles or zoodles! — If you really want your noodles to be coated with the garlic sauce, I recommend doubling the sauce when making this.
Wednesday
- Main Dish: Shake n Bake Pork Chops — This is a meal that adults and kids rave about.
- Side Dish:
- Baked Beans and Ground Beef — This is incredibly simple, but hearty and perfect as a side dish.
- Instant Pot Corn on the Cob — The garlic butter that absorbs into the corn is the secret that will turn this into a family favorite. Try my crock pot version for a different way to make it!
Thursday
- Main Dish: Crock Pot Pork Carnitas — Today’s recipe is the start of the next TWO days. Let’s do make-your-own-bowls tonight.
- Side Dish:
- Cilantro Lime Rice —Someone who has worked at Chipotle said this rice tastes just like the original recipe 🤯
- Black Beans —Keep it simple and spice up some canned beans!
- Tortillas or taco shells
- Toppings:
- Shredded lettuce
- Corn Salsa
- Pico de Gallo
- Sour Cream
- Guacamole
- Shredded cheese
Friday
- Main dish: Carnitas Street Tacos — With leftovers from yesterday, tonight’s dinner will be crazy easy!
- Side Dish:
- Street Corn Casserole — quick, easy and one of my most popular recipes.
- Mexican Roasted Vegetables — These only take a few minutes to prepare and roast.
- Dessert — Chocolate Chip Pudding Cookies —It took me a while to really perfect this cookie, and it was more than worth it!
Appetizer
- Garlic Chicken Bites — These are perfect for a heavier, bitesized appetizer. Try them with my homemade ranch.
