Family Meal Plan
MONDAY
- Main Dish: Crockpot BBQ Chicken – Only 3 ingredients and the slow cooker does all the work. What a way to start the week!
- Side Dish:
- Creamy Mashed Potatoes – A classic side that knocks it out of the park!
- Easy Baked Macaroni and Cheese – The perfect comfort side dish to compliment your BBQ chicken.
TUESDAY
- Main Dish: Baked Bean Burritos — With just a few ingredients you probably already have on hand, you can have this in the oven in 10 minutes!
- Side Dish:
- Chips and salsa – Pick your favorite
- Homemade salsa
- Corn salsa
- Mango Avocado Salsa (a personal favorite!)
- Pineapple Salsa
- Mexican Street Corn Casserole — If you’ve never had Mexican street corn, you are in for a treat. I LOVE this side and so does my family.
- Chips and salsa – Pick your favorite
WEDNESDAY
- Main Dish: Turkey Spinach Feta Burgers – These burgers are packed full of lean protein, greens, Greek seasoning, and salty feta for the perfect combination of flavors.
- Side Dish:
- Pesto Tortellini Salad— This pasta salad is ready in no more than 15 minutes using just 6 ingredients!
- Garlic Mixed Vegetables – This winning side dish is a family favorite. It’s so easy and always SO good.
THURSDAY
- Main Dish: Easy Curry Chicken – Instead of taking hours like some traditional curries, this version of the classic dish just takes one pot and minutes on your stove top.
- Side Dish:
- Lemon Rice – This goes perfectly with the curry chicken.
- Jasmine Rice – Keep it even more simple by serving your dish with jasmine rice. I love that it soaks up all of the curry flavors.
- Sautéed Spinach – Instead of putting your chicken on a bed of rice, lighten it up with a bed of spinach.
- Naan — Most grocery stores (even smaller ones like Trader Joe’s) carry Naan, a traditional Indian bread. It will remind you of pita bread, but it is much fluffier. It’s great for making sure you get every last drop of sauce!
FRIDAY
- Main dish: Garlic Bread Pizza – After a long week, let the kids think you’re extra fun with a pizza dinner, even though this meal requires very little effort. We like to have a variety of toppings out so that everyone can DIY their own. Check out my big list of Pizza Topping Ideas and maybe there are some new ones you haven’t thought of!
- Side Dish:
- Homemade Ranch Dressing – I keep a jar of this in my fridge at all times. Chop up some veggies and serve them next to this delicious dressing.
- Side Salad with Balsamic Vinaigrette —This dressing is so easy, but makes crisp greens taste amazing!
- Dessert – Chocolate Peanut Butter Rice Krispies — These are irresistible, no baking required treats that can be made in as little as 20 minutes!
APPETIZER
- Buffalo Chicken Nuggets – This can be lunch, dinner, a snack, or the most talked about appetizer! These simple baked nuggets are packed with delicious buffalo flavor and are much lighter than take out! *Bonus – use the ranch dressing you made Friday to dip them in!*
