Family Meal Plan
MONDAY
- Main Dish: Grinder Italian Salad – This is basically a lightened up version of the Grinder Sandwiches that went viral on TikTok.
- Side Dish:
- Pesto Cheese Bread – Have this alongside the salad and call it a deconstructed grinder salad “sandwich”.
- Instant Pot Baked Potatoes – These classic baked potatoes have an amazing fluffy texture and they are so easy to make because of the instant pot technique!
TUESDAY
- Main Dish: Mexican Chicken Casserole – This already quick and delicious meal is even faster if you buy a rotisserie chicken at the store. *Leftover Alert! Save leftovers for Thursday when we turn this casserole into Mexican Stuffed Shells!*
- Side Dish:
- Mexican Corn Salad – This sweet and tangy salad checks both the quick and easy boxes, and I can’t wait for you to try this!
- Mexican Roasted Vegetables – If you have a few extra minutes, these are delicious as a side dish.
WEDNESDAY
- Main Dish: Slow Cooker Thai Chicken – The 5 star reviews keep on coming in for this! You can customize the spiciness which makes it an even more family friendly meal. Yum!
- Side Dish:
- Lemon Rice – This goes perfectly with the Thai chicken.
- Jasmine Rice – You can’t go wrong by keeping it even more simple than by serving your dish with jasmine rice. The rice soaks up the deliciously, rich sauce and it’s so good!
- Cauliflower Rice – Same idea as the rice, but low carb.
- Cucumber Salad – My family loves when we have this crunchy, refreshing salad! It’s such a great side dish that complements the spiciness of Thai chicken.
THURSDAY
- Main Dish: Mexican Chicken Stuffed Shells – *Leftover Time!* Stuff prepared large pasta shells with leftover Mexican Chicken Casserole. Place the shells in a baking dish and cover with red enchilada sauce. Sprinkle with cheese and bake 20-30 minutes or until heated through. Serve with a drizzle of sour cream and chopped cilantro.
- Side Dish:
- Crockpot Refried Beans – With just a handful of ingredients, you can let the slow cooker turn dried pinto beans into the most velvety, creamy, rich, and delicious refried beans!
- Tableside Guacamole – There is something so special about table-side guac at a restaurant, right? I was so happy when I finally mastered the taste! Make it really feel like you’re dining out by having one of your kiddos do the mashing for you!
FRIDAY
- Main dish: Baked Chili Cheese Dogs – I love having a meal on Friday that can be completely customized by everyone! These chili cheese dogs can be topped with their own favorite toppings, and you’ll love how easy it is to put together this kid-friendly dinner.
- Side Dish:
- Oven Roasted Green Beans – The one healthy veggie my kids truly love!
- Crock Pot Corn on the Cob – This is the easiest way to make corn and is such a classic side.
- Dessert – Key Lime Cookies – These cookies seriously melt in your mouth!
APPETIZER
- Cold Spinach Feta Dip – Serve this easy appetizer with a platter of veggies, crackers, pita chips, or pretzels.
