Family Meal Plan
MONDAY
- Main Dish: Jalapeño Popper Chicken Sliders – The perfect combo of sweet and salty, creamy and spicy, and bite sized, yet filling. PLUS, you use one pan and it’s delicious!
- Side Dish:
- Mexican Street Corn Casserole – We love this recipe! It also happens to be an all time top rated recipe by my readers, so you know it’s a winner.
- Crock Pot Black Beans – These are restaurant quality and you don’t want to miss out on making these.
TUESDAY
- Main Dish: Buffalo Chicken Burgers – If you haven’t made these yet, you are missing out. They’re delicious, packed with protein and only take a few minutes! *Make extra so you have leftovers for Thursday’s dinner*
- Side Dish:
- Sautéed Peppers and Onions —For a little crunch, serve these as a side. You can even top your burger with them.
- 3 Minute Corn on the Cob — The garlic butter on this corn is going to make you wish you made more!
- Sauces:
- Homemade Ranch Dressing — So good to add a dollop to your patty.
- Buttermilk Dressing — There is store-bought dressing and then there is homemade. My homemade buttermilk dressing is so easy to make and I always keep a jar in my fridge because the kids reach for it over and over!
- Extra Buffalo Sauce
WEDNESDAY
- Main Dish: Ground Beef Stir Fry with Zucchini and Peppers – This is loaded with healthy vegetables, tossed in a sweet and sticky sauce, and cooked in one pan for easy clean up. In 20 minutes you’ll have dinner served.
- Side Dish:
- Asian Cucumber Salad – You can prep this ahead of time for an even quicker side.
- Shredded Cabbage – Thinly shredded cabbage is a healthy, fresh way to make dinner complete. Or try my Sriracha Slaw for a cabbage dish with a kick!
- Rice, brown rice, cauliflower rice to lighten it up, or quinoa
THURSDAY
- Main Dish: Buffalo Chicken Salad – Add the leftover buffalo chicken burgers from Tuesday to a salad for a quick and delicious weeknight meal. The base from my Blackened Chicken Salad is perfect for this!
- Side Dish:
- Loaded Baked Potato Soup – Even when it’s warm out, I LOVE a soup and salad night. This homemade soup could not get any easier or tastier.
- Garlic Bread – Scoop up every last drop of baked potato soup with our favorite garlic bread.
FRIDAY
- Main dish: 7 Layer Taco Casserole – If you love seven layer dip, you will be a big fan of this dinner! Seven layers of Mexican favorites, layered into the perfect casserole. So good!
- Side Dish:
- Blender Salsa with chips– This salsa is CRAZY easy, SO delicious, and healthy!
- Tortillas –You will love to scoop up the goodness with extra tortillas.
- Dessert – Oatmeal Raisin Cookies – These cookies are soft, delicious and you must make them this week!
APPETIZER
- Veggies and homemade ranch – Perfect for grazing on throughout the day. If you haven’t tried homemade ranch, you haven’t lived.
