Family Meal Plan
MONDAY
- Main Dish: Chicken Cobbler – TikTok put this delicious meal on the map! This is an easy, low-prep recipe that doesn’t even really need a side dish because it is already full of veggies, protein and yummy biscuits.
- Side Dish:
- Mashed Potatoes – If you want an extra comforting meal, serve your chicken cobbler on top of these mouth watering, creamy mashed potatoes.
- Roasted Green Beans — I have 5 yummy ways to make these and they’d all work well with the Chicken Cobbler. My vote would be for you to make the balsamic version. 🙂
TUESDAY
- Main Dish: Carnitas Enchiladas — These enchiladas are stuffed with tender, savory pork carnitas, black beans and cheese. Do yourself a favor and double your batch so you can freeze some for another night!
- Side Dish:
- Mexican Roasted Veggies — This is my personal favorite!
- Chipotle Corn Salsa — This is perfect for serving with chips on the side of your enchiladas.
WEDNESDAY
- Main Dish: Shakshuka — I was so inspired on my trip to Israel that when I came home I had to recreate this traditional breakfast. But why save it for breakfast? Enjoy it for dinner!
- Side Dish:
- Roasted Cauliflower — This dish is so simple and traditionally is perfect with Shakshuka.
- Pita — This is most commonly served with Shakshuka.
THURSDAY
- Main Dish: Hawaiian Steak — Want a dinner that tastes like vacation and has an easy cleanup? The blend of garlic, pineapple juice and soy sauce as a marinade is exactly what you need! And everything tastes better on a grill!
- Side Dish:
- Mediterranean Chickpea Salad — This is packed full of flavors and loaded with garbanzo beans, zucchini, pepper, tomatoes and topped with feta cheese.
- Garlic Bread — This is a family favorite.
FRIDAY
- Main dish: Baked Chicken Tenders — A kid friendly meal without the guilt! These can be customized for a fun Friday meal – top a salad with this delicious chicken for yourself and give the kids crispy tenders with yummy dips to go along side.
- Side Dish:
- Side Salad with Homemade Buttermilk Dressing — This Buttermilk Dressing recipe is so good you may never eat store bought again!
- Honey Mustard Sauce — This dip is so good!
- Dessert – Caramel Snickerdoodles — If a caramel square and a snickerdoodle had a baby this would be the result. These cookies are over the top delicious and a crowd favorite!
APPETIZER
- Pesto Snacks — With just 2 ingredients these are perfect for an easy little snack, or if you need something quick to throw together for a group.
