Family Meal Plan
MONDAY
- Main Dish: – Pan Seared Pork Chops with Corn Salsa– This is the perfect spring weather meal! Quick and easy, this recipe comes together fast but feels like a restaurant quality meal! BONUS- you can make extra corn salsa and snack on it all week long with chips!
- Side Dish:
- Cilantro lime rice– This easy rice is our go-to side… it tastes just like Chipotle!
- Black Beans– Try these black beans in the crock pot, or just make these canned beans taste great with this recipe!
TUESDAY
- Main Dish: Mozzarella Chicken– One of my personal favorites, I could probably eat this meal every week and never get tired of it! It pairs tender chicken breast with a creamy marinara sauce and lots of delicious mozzarella cheese.
- Side Dish:
- Pasta– Serve with your favorite pasta or pasta alternative!
- Oven Roasted Vegetables– These are a go-to for a quick, wholesome side dish for almost any meal.
WEDNESDAY
- Main Dish: Mississippi Pot Roast– Just a couple of ingredients, this hands off dinner will be the mid week winner! Tender beef, lots of flavor, minimal work, there is just so much to love about this recipe.
- Side Dish:
- Mashed Potatoes– This is our go to recipe and is so great for piling the saucy chicken right on top!
- Broccoli Slaw– The best part about this side is that you can prepare it in advance so it can be ready to go when the roast is!
THURSDAY
- Main Dish: Green Chile Chicken Casserole – This simple casserole is creamy and delicious and can be made with leftover shredded chicken, or rotisserie chicken to make it quick! A family friendly dinner for the win!
- Sides:
- Mexican Street Corn Casserole or classic Corn Casserole – Both are among our top recipes on the site!
- Peppers and Onions– This light and healthy side is quick and perfect for the flavors in the dish.
FRIDAY
- Main dish: Italian Turkey Meatball Subs– Perfect for a Friday night in, these easy sub sandwiches are a filling crowd pleaser. The recipe is easily scaled if you need to feed a bunch of hungry kids or family friends coming over for the night.
- Side:
- Tomato Basil Mozzarella Salad– This super fresh salad is quick and always a crowd pleaser
- Garlic Parmesan Broccoli– My kids favorite way to eat broccoli… and mine too!
- Side:
- Dessert – Lemon Meltaway Cookies– I am going to be making a BIG batch of these this weekend because they are so perfect for spring, and the best for an Easter celebration.
APPETIZER
- Layered Greek Dip– My absolute favorite dip and perfect for sharing with friends!
