Ingredients + Substitutions
- Chicken Breast – You’ll need 2 pounds of boneless, skinless chicken breasts cut into 1-inch pieces. You can also use boneless skinless chicken thighs if preferred, but the cooking time may need to be adjusted.
- Cream of Chicken Soup – One can of cream of chicken soup creates the base for our creamy sauce.
- Chicken Gravy Mix – This is the perfect blend of seasonings, flour, and cornstarch to add flavor and create a thick, creamy sauce.
- Garlic – I use 6 cloves of garlic for plenty of flavor. Freshly minced or pre-minced will work.
- Butter – Cut into pats to add flavor depth to the chicken.
- Chopped Parsley (optional) – This is an optional finish for your chicken, but adds a pop of color and freshness.

Recipe Step by Step
I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make crockpot chicken bites.
- Cut your chicken breast into cubes, then add into the crockpot insert.
2. Add in the soup, gravy, and minced garlic.
3. Mix well, then top the chicken with pats of butter.
4. Cover the crockpot, then cook on high for 2-3 hours or on low for 3-4 hours. Once cooked, garnish with parsley and serve!
Recipe Tips
- Cube the chicken evenly. When you chop the chicken up, be sure that all of the pieces are cut pretty evenly (at around 1-inch) so they all cook at the same rate.
- If you have time, cook on low. Chicken cooked on low is always just a little juicier and a little more tender. If you have the extra time, I recommend cooking on low for a little longer. If you’re working with less time, high will work too!
- Don’t over-cook! – Whether you’re cooking on high or low, the key to tender and moist chicken is simply not over-cooking it. Since chicken is a leaner meat, over-cooking will quickly zap the moisture out and create a tougher, chewier texture.
Recipe Short Cuts
If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!
- Use fresh or pre-thawed chicken – Frozen chicken is a great place to start, but make sure you thaw it in advance. Alternatively, simply start with fresh chicken!
- Plan ahead – Keep in mind that this slow cooker recipe cooks, well, slow. Leave yourself 2-4 hours of cooking time!
- Use pre-minced garlic – You can, of course, take the time to mince your own garlic, but pre-minced will work great too!

Recipe FAQ’s
Do you have to cover chicken in the crockpot?
Yes! The crockpot does require a lid to work properly. Without it, all the moisture needed for the chicken to cook will evaporate out of the top.
Why is my chicken tough after cooking in the crockpot?
It may be over-cooked! The key to moist and juicy crockpot chicken is to make sure it’s cooked just until done and no longer. Over-cooked chicken can quickly become dry and tough.
How do you keep chicken soft and juicy?
I recommend checking the chicken as soon as the cook time is up. As soon as it’s 165ºF, then it’s ready to serve!
