With creamy herb-and-garlic Boursin, a perfectly fried egg, peppery arugula, juicy cherry tomatoes, and a drizzle of sweet balsamic glaze, this egg toast is my new favorite breakfast (it makes the most amazing easy lunch or hearty snack, too!)

Boursin cheese is having a moment, and I’m not surprised! The creamy garlic-and-herb spread is as versatile as it is delicious. I’m a huge fan of Boursin cheese recipes!

I love making recipes using Boursin, and I’ve even shared this delicious Boursin Mashed Potatoes recipe in the past. But for this recipe, I decided it was Boursin-for-breakfast time.

Eggs with Boursin cheese are a great combo, and I especially love them together in Boursin Egg Toast. We start with a couple of thick slices of sourdough, toasted right in the buttery skillet. Spread on some Boursin cheese, then quickly cook the eggs, which fry up flawlessly in the already-hot skillet. Add the eggs to the toast, then top with arugula, tomatoes, and balsamic reduction. It’s so good!

This Boursin Egg Toast recipe is as simple as promised! Just 7 ingredients and 15 minutes for a family friendly meal.

In this section I am going to go through a few tips and tricks I use for how to make Boursin Egg Toast to get the absolute best and most delicious results.

Ingredients + Substitutions

Boursin Egg Toast ingredients
  • Bread – I like to use sourdough bread for this Boursin Egg Toast recipe. If you prefer another sturdy bread, that’s fine too!
  • Butter – For toasting the bread and frying the eggs.
  • Eggs – You’ll fry these in the butter in your skillet after toasting the bread.
  • Boursin cheese – You’ll want the classic garlic and fine herbs Boursin cheese.
  • Arugula – I like to use baby arugula which is already pre-washed and ready to go.
  • Cherry tomatoes – Grape tomatoes will work, too. I like to cut them in half or even quarters if they’re really big, so that they’re easy to eat.
  • Balsamic glaze – Simple reduced balsamic vinegar, it adds a sweet and tangy element of flavor.
  • Salt & pepper – Just a little to finish your egg toast.

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Boursin Egg Avocado Toast– Top the Boursin with slices of creamy avocado before adding the remaining ingredients.
  • Boursin Smoked Salmon Toast– Instead of an egg, top the creamy Boursin with smoked salmon.
  • Boursin Bacon & Egg Toast– Add cooked, chopped bacon to the toast along with the arugula and tomatoes.
  • Boursin Scrambled Eggs on Toast– Whisk the eggs with a splash of water and a pinch of salt and pepper in a medium bowl. Add them to a skillet and scramble them. About halfway through the scramble, rip the Boursin into chunks and add them to the scrambled egg mixture. Pile onto the toast and top with arugula, tomatoes, and balsamic glaze for scrambled Boursin cheese eggs.

Toast the bread in a warm buttered skillet.

Spread Boursin cheese over the top.

Step 3 of how to make Boursin Egg Toast: An egg is placed on top of the cheese.

Fry the egg in the skillet, then top the toast with the egg.

Step 4 of how to make Boursin Egg Toast: Arugula, cherry tomatoes, and a drizzle of balsamic vinegar are placed over the top.

Top with arugula and tomatoes. Drizzle balsamic glaze over the top. Finish with salt and pepper.

Recipe Tips

  1. Toast the bread in the skillet – This step gives you the amazingly golden-brown, buttery toast, and it helps make the pan piping hot so that the eggs fry easily and don’t stick to the pan.
  2. Make your own balsamic reduction – If you can’t find balsamic glaze/reduction at the store, try making your own! Take one cup of balsamic vinegar and simmer it, stirring often, until reduced and thick. It should take about 10 minutes (and it will thicken more as it cools).

  • Buy pre-washed greens – Bags of baby arugula can be found in the salad case in the produce section of most grocery stores.

Ingredients 

  • 2 slices sour dough bread
  • 1 tablespoon butter, divided
  • 2 eggs
  • 2 tablespoons Garlic & Herb Boursin cheese
  • ½ cup arugula
  • ¼ cup cherry tomatoes, quartered
  • Drizzle of balsamic glaze
  • Salt and pepper, to taste

Instructions 

  • Heat a skillet over medium to medium high heat. Add ½ tablespoon of butter and spread around the skillet until it melts.
  • Place the bread in the skillet and let brown on one side for 2-3 minutes or until toasty. Then flip and brown the other side, about 1-2 minutes. Remove from skillet.
  • Turn the skillet to low, add the remaining tablespoon of butter. Crack the eggs in the skillet and cook to desired doneness.
  • To assemble the toast, spread the top side of the sourdough bread each with Boursin cheese. Then add the egg. Top with arugula, tomatoes, and drizzle balsamic glaze. Add salt and pepper to taste.
    Serve immediately.

  • Sourdough bread: Any sturdy, rustic bread will do. 
  • Arugula: Baby spinach works well as a substitute.
