Ingredients
2slicessour dough bread
1tablespoonbutterdivided
2eggs
2tablespoonsGarlic & Herb Boursin cheese
½cuparugula
¼cupcherry tomatoesquartered
Drizzle of balsamic glaze
Salt and pepperto taste
Instructions
Heat a skillet over medium to medium high heat. Add ½ tablespoon of butter and spread around the skillet until it melts.
Place the bread in the skillet and let brown on one side for 2-3 minutes or until toasty. Then flip and brown the other side, about 1-2 minutes. Remove from skillet.
Turn the skillet to low, add the remaining tablespoon of butter. Crack the eggs in the skillet and cook to desired doneness.
To assemble the toast, spread the top side of the sourdough bread each with Boursin cheese. Then add the egg. Top with arugula, tomatoes, and drizzle balsamic glaze. Add salt and pepper to taste.Serve immediately.
Notes
Substitutions:
Sourdough bread: Any sturdy, rustic bread will do.
Arugula: Baby spinach works well as a substitute.
