Monday
- Main Dish: Balsamic Steak Bites – These disappear every single time I make them. Tender steak bites tossed in the most ridiculously good balsamic glaze. It feels a little fancy, but it’s secretly easy enough for a Monday.
- Side Dish:
- Garlic Parmesan Mashed Potatoes – Creamy, buttery, loaded with garlic and parmesan. My husband would happily make these the main course!
- Steakhouse Style House Salad – The easiest way to make dinner feel like a steakhouse night at home.
Tuesday
- Main Dish: Pesto Chicken Salad with Orzo – One of those meals that somehow tastes like summer in a bowl. It’s fresh, filling, and leftovers disappear fast!
- Side Dish:
- Spinach Feta Puff Pastry Spirals – These look impressive but they’re almost embarrassingly easy to make.
- Garlic Bread – Because nobody has ever been disappointed to see garlic bread on the table.
Wednesday
- Main Dish: Mexican Ground Beef and Rice – If your family loves taco night, they’re going to ask for this one again and again. It’s easy, hearty, and everything cooks together for a dinner everyone actually gets excited about.
- Side Dish:
- Guacamole – Fresh, creamy, and absolutely worth the extra five minutes.
- Mexican cornbread – My favorite thing to dunk into every last bite.
- Sour cream
- Pico de gallo – Bright, fresh, and the easiest way to finish the meal.
- Lime wedges
- Crushed tortilla chips
Thursday
- Main Dish: Chicken Fried Rice – Just 15 minutes from start to finish, which honestly feels like cheating on a busy night. Better than takeout and made with ingredients you probably already have.
- Side Dish:
- Cucumber Salad w Ginger Dressing – No cooking required and the cool crunch is exactly what this meal needs.
- Parmesan Cauliflower Bites – Don’t tell the kids they’re cauliflower until after dinner. Crispy, cheesy, garlicky…they’ll be grabbing seconds before they realize they’re eating vegetables.
Friday
- Main Dish: Bang Bang Chicken Bowls – This recipe has saved dinner at my house more times than I can count. Pantry staples, big flavor, and everyone can build their own bowl exactly how they like it.
- Side Dish:
- Asian Coleslaw – I always pile this right into my bowl because the crunchy slaw with the warm rice and chicken is so good together.
- Brown Butter Broccoli – Roasting it until the edges get golden makes all the difference. Add a tiny drizzle of sesame oil if you really want to level it up.
- Edamame with Sea Salt
- Dessert – Devils Food Cake Cookies – If you need an easy summer baking project, this is it. Four ingredients, one bowl, and they’re practically impossible to mess up. My kids love helping with these, which means I get cookies without doing all the work.
Appetizer
- Pepperoni Pizza Rolls – Summer is officially in the “the kids are hungry again” season. These homemade pizza rolls are surprisingly easy, ridiculously delicious, and perfect for lunch, snacks, or movie night.
