Ingredients + Substitutions

- Puff pastry sheet – You’ll use just one sheet from the box.
- Pears – Pears are definitely one of the stars of this appetizer, but you could also use a variety of apples as a substitute. Honeycrisp or Granny Smith work especially well and give the bites a slightly more tart flavor.
- Gorgonzola cheese – Other creamy cheeses that could be used would be Brie, feta or sharp white cheddar.
- Chopped walnuts – These will add a nice crunch to your appetizer, as well as a nice warm, nutty flavor.
- Arugula – Arugula is a delicious, peppery green. You can use full grown or baby arugula. It doesn’t matter which one since you’ll be chopping it up.
- Honey – Simply use whatever honey you keep on hand. A drizzle is all you’ll need.
Make sure to see the recipe card at the bottom of this post for the full quantities and ingredients list.

Recipe Step by Step
I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make these sweet and savory puff pastry bites.

Unfold the puff pastry and cut it into 24 rectangles.

Remove the core and finely dice the pear.

Spray a mini muffin tin with cooking spray. Place one piece of puff pastry into each space.

Fill the bottom of each muffin with diced pear.

Add a sprinkle of Gorgonzola cheese and top with a few pieces of walnuts.
Bake until the edges of the pastry are puffed and golden brown. Remove from muffin tins and sprinkle the tops with chopped arugula and drizzle with honey.
Recipe Tips
- Remove pastries fast! – It is very important that you remove the pastries from the muffin tin immediately. They are easy to remove when hot, but get very hard to remove as they cool. Even waiting 5 minutes will make them much harder to remove. For best results, remove them right away!
- Dice small – Dice the pear into small, evenly sized pieces. They will fit better into the mini muffin cups and will cook more evenly.
- Don’t overfill – You don’t want your pastry cups to be overflowing! A little pear, Gorgonzola and walnut goes a long way. Overfilling can cause the cheese and fruit to spill over as they bake. A typical pastry bite appetizer is a two-bite finger food.
- Watch the edges – Puff pastry can go from golden to over-browned quickly! Start checking around the 15 minute mark to ensure they don’t become overbaked.
Recipe Short Cuts
If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!
- Prep in advance – Prep the ingredients ahead of time. Assemble the bites shortly before baking so the pastry stays flaky. Or go ahead and prep the entire tray, then cover it with plastic wrap and place it in the refrigerator until you’re ready to bake.
- Cut with pizza cutter – Pizza cutters are very efficient at cutting puff pastry! They make clean cuts and will make straighter, more even lines.
- Buy pre-prepped everything! – When purchasing your ingredients, buy everything pre-prepped! Grab chopped walnuts instead of chopping your own. Buy crumbled Gorgonzola instead of cutting or crumbling it yourself. Use pre-washed arugula so you can simply grab a handful and chop. When you’re wanting to save time, every little bit helps.

Pear and Gorgonzola Puff Pastry Bites Leftovers
If you have leftovers after making this recipe, then it is your lucky day! Most components will save and reheat well. Remove the arugula before freezing, as it will wilt from being in the freezer.
To save leftovers, place in an airtight container and store:
- in the refrigerator for 3-4 days
- in the freezer up to a month
Recipe FAQ’s
Where do I find puff pastry in the grocery store?
Puff pastry is found in the frozen foods section of most grocery stores. It’s typically near the frozen desserts and pie crusts. It’s sold in boxes as sheets or blocks.
What does Gorgonzola cheese taste like?
Gorgonzola is similar to blue cheese, however it’s more mild and doesn’t have quite the punch. It has a salty, earthy, tangy flavor and its texture is smooth and creamy.
Do I need to peel the pear?
No need! The peel is edible and honestly, it’ll save you time not to peel it! However, if you prefer to not have the peel, then go for it and peel away!
How do I keep the puff pastry from sticking to the mini muffin tin?
Lightly grease the muffin tins with cooking spray before adding the pastry. Once they’re finished cooking, gently remove them from the tin immediately. Waiting will make them incredibly difficult to remove!
