Crockpot Chicken Enchilada Soup has all the elements of classic chicken enchiladas in the form of a hearty slow cooker soup! Instead of making a sauce and filling, then having to assemble and bake, this is an easy dump-and-go recipe where you stir together the sauce, black beans, chicken, and veggies in your crockpot, then finish with tortilla chips, cheese, and your favorite enchilada toppings.
My family loves BBQ Chicken Enchiladas and Chicken Enchilada Casserole, but while those recipes are definitely easy, this crockpot chicken enchilada soup is easiest of all! And when it comes to dinner, sometimes we just need to hit that easy button, right? The slow cooker is one of my favorite ways to cook soup because the flavors have plenty of time to mix-and-mingle in the crockpot, but I don’t have to stand over the stove to supervise.
Why I LOVE this recipe!
- Dump and go – A lot of crockpot recipes have you cooking veggies or searing meat on the stovetop first, but I just don’t have time when I’m rushing to get the kids to school in the morning. I love that this recipe lets me just stir everything together into the slow cooker.
- Perfect for busy weeknights – Dinner’s ready when you are!
- Zesty Tex-Mex flavor – Taco seasoning, enchilada sauce, green chiles, and black beans bring ALL the bold flavor.
- Eats like a meal – Not all soups fill you up, but this one is chock full of beans and chicken so you won’t be running to the fridge for a snack a few hours after dinner.
Recipe Notes
This chicken enchilada soup recipe is as simple as promised! Just add all the ingredients to your slow cooker for a family friendly meal.

Ingredients + Substitutions

- Boneless skinless chicken breasts – You’ll shred or dice the chicken to incorporate it into the soup, so it’s much easier to use boneless chicken.
- Taco seasoning – This lets you add a lot of flavor in a single packet, without having to measure the chili powder, salt, cumin, and garlic powder separately. (Or use my homemade taco seasoning.)
- Onion – I used a yellow onion, but red onion would also work.
- Red enchilada sauce – With the flavors in this recipe, red enchilada sauce works best.
- Diced tomatoes – Don’t drain them! The juices will add flavor to the broth.
- Sweet corn – I use canned corn, but frozen or even fresh also works.
- Black beans – Rinse these well, until the water runs clear.
- Green chiles – You can purchase mild or spicy varieties, so choose whichever your family prefers.
- Chicken broth – Vegetable broth would also work if you happen to have that on hand.
- Toppings – I like to add fresh cilantro, sour cream, shredded cheddar cheese, and tortilla chips. Feel free to swap in any of your favorite toppings!
Make sure to see the recipe card at the bottom of this post for the full quantities and ingredients list.
Recipe Variations
If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!
- Swap out the black beans – Pinto beans or red beans also work.
- Use chicken thighs – Keep in mind that they take slightly longer to cook through.
- Add extra veggies – Zucchini and bell peppers would both work well!
Recipe Step by Step
I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make chicken enchilada soup in a crockpot.

Add all the ingredients to your crockpot.

Stir and cook on LOW for 4-4.5 hours or HIGH for 3-3.5 hours.

Shred or dice the chicken, then stir it back in.

Recipe Tips
- Dice the onion into even pieces – This ensures it all cooks evenly.
- Use a good quality broth – It’s the backbone of flavor for the entire soup, so it matters!
- Don’t open the lid – Whenever you open the lid of your crockpot while it’s cooking, you extend the cooking time.
- Use two forks to shred the chicken – No need for any special tools!
Recipe Short Cuts
If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!
- Use rotisserie chicken – Reduce the cooking time to 2 hours on low, just to bring all the flavors together, and stir the chicken in during the last 10 minutes of cooking time.
- Use frozen or pre-diced onion – This eliminates almost all your prep work!
- Start the night before – Add everything to your slow cooker insert, refrigerate, and then start cooking in the morning.
