Family Meal Plan

Monday
- Main Dish: Teriyaki Chicken Thighs – Just 10 minutes of hands-on prep and about 20 minutes to cook this family friendly entree that is super tasty!
- Side Dish:
- Vegetable Fried Rice – I love this recipe because it has such a short list of ingredients and is always a lifesaver during a busy week.
- Sautéed Green Beans – Green beans are like a dinnertime bestie – kids love them, they’re quick and easy to make and compliment almost any dish!
Tuesday
- Main Dish: Nixon Chicken – This is a 70’s American classic dish named after the US President Richard Nixon. It screams comfort food and only takes about 10 minutes to throw it all together. It’s a great all in one meal, but if you want a side dish check out my suggestions below.
- Side Dish:
- Mashed Sweet Potatoes – Sweet potatoes make me think of the holidays, but sometimes I just crave them! These aren’t the sweet, marshmallow topped potatoes you might be thinking of. They are more savoring and have a perfect fluffy texture that everyone loves and enjoys.
- Bisquick Cheddar Bay Biscuits – This recipe is very quick because of the mix we use and it’s my favorite side to make!
Wednesday
- Main Dish: Baja Chicken Tacos – These are incredibly easy to make and I need you to make them!
- Side Dish:
- Crock Pot Black Beans – Dry beans really do make the best beans, but it’s a lot of work. The trick is to make your crockpot do the work! Add some seasonings, set the timer, and you are going to have some very happy people at the dinner table.
- Mexican Rice – As if the gourmet black beans aren’t restaurant quality enough – people will ask if you’re opening one up when they eat these. Don’t tell them how easy and quick they are to make 😉
Thursday
- Main Dish: Blackened Fish Filets – The method I use gives you the most tender, flavorful and perfect fish! You probably have all the simple pantry ingredients already and you definitely have 10 minutes to whip up this delicious dinner!
- Side Dish:
- Brussels Sprouts – 4 simple ingredients and just the right amount of crunch!
- Side salad – Red wine vinaigrette is a little bit tangy so it’s great over a fresh side salad. You could even serve your fish right on top of this salad.
Friday
- Main Dish: Crockpot Steak Bites – Time and time again these just about break the internet. It’s a dump-and-go recipe that you might just add to your regular recipe rotation.
- Side Dish:
- Oven Roasted Vegetables – How often do you say “wow, these veggies are delicious!”? Not often, but you might when you taste these.
- Garlic Bread – is perfect for soaking up the steak sauce.
- Dessert – Raspberry Cheesecake Cookies – From a cake mix box to sweet and tangy perfection. If your kids like to help in the kitchen, get them in on this one.
Appetizer
- Buffalo Chicken Tenders – with no breading! Sometimes we have these for dinner, but I really love serving them as an appetizer with a side of Homemade Ranch dressing or Chunky Blue Cheese Dressing
