Blondies are a dessert bar with a similar composition and texture to brownies, just without the chocolate—hence the name “blondie”!
Traditional blondies are made with all of your classic cookie bar ingredients including flour, egg, brown and white sugar, vanilla, etc.
These Peanut Butter Blondies use all of those ingredients with the addition of creamy peanut butter and peanut butter chips— a nutty twist for all of the peanut butter lovers out there!

Ingredients + Substitutions
- Butter
- Peanut Butter – Use creamy peanut butter for the best texture; and not the natural stuff! Brands such as Jif and Skippy work best for this recipe. Natural peanut butter brands will affect the texture.
- Brown Sugar
- Granulated Sugar
- Eggs
- Vanilla
- All-Purpose Flour
- Baking Powder – Be sure to make sure that your baking powder isn’t expired so that it serves its intended purpose. Expired leavening agents don’t give baked goods the lift they need for just the right texture.
- Salt
- Peanut Butter Chips

Recipe Step by Step
In a large mixing bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until smooth and fluffy. Add in the eggs and vanilla extract, then mix to combine.
Add in the flour, salt, and baking powder, then mix well to combine.
Fold in the peanut butter chips into the batter until evenly distributed.
Transfer the dough to a 9×13 pan lined with parchment paper, then bake at 350ºF until set.
Recipe Tips
- Line the pan – Before pressing the dough into your baking dish, be sure the line the pan with parchment paper. This prevents the dough from sticking to the pan and/or burning on the bottom.
- Don’t over-mix – When mixing up your cookie dough, stir only until just combined. Over-mixed dough can be tough and dense.
- Cool before cutting – I recommend cooling the Blondie Bars for at least 10 minutes before slicing into them for cleaner cuts.

- Reese’s Peanut Butter Blondies – Skip the baking chips and use Reese’s Pieces to add a little bit of crunch to your blondies.
How to Freeze Peanut Butter Blondies
Peanut Butter Blondies can be frozen before or after baking. If freezing the cookie dough you are able to just pop out a few or as many as you need to bake to have hot, fresh blondies on demand.
If you prefer, you can bake all of the blondies and freeze after baking. Freezing the peanut butter blondies will preserve them and once, thawed they come out just as soft, chewy, fresh, and perfect as they are when freshly baked.
Both are great options for keeping blondies fresh and delicious!
To freeze dough before baking:
- Prepare the cookie dough as instructed.
- Flatten into a rectangle or form into a ball, then wrap tightly in plastic wrap and foil.
- Store in the freezer for up to 3 months.
- When you’re ready to bake, simply thaw overnight in the fridge, press into a baking pan, then bake as directed.
To freeze baked cookies:
- To freeze baked cookie bars, let them cool completely, then cover the pan tightly with plastic wrap and foil.
- Store in the freezer for up to 3 months.
- When you’re ready to enjoy, thaw on the counter or in the fridge and dig in!
How to store cookies
If you have extras after making Peanut. Butter Blondies, then they can be saved to munch on at a later time.
To save leftovers, separate into meal sized portions and then place in an airtight container and store:

Peanut Butter Blondies
Ingredients
- ¾ cup salted butter, softened
- ½ cup creamy peanut butter
- 1¼ cup brown sugar, packed
- ½ cup granulated sugar
- 3 eggs
- 2 teaspoons vanilla
- 2¼ cups all purpose flour
- ½ teaspoon baking powder
- 1 teaspoon salt
- 1 cup peanut butter chips
Instructions
- Preheat oven to 350˚F.
- In a large bowl, cream the butter, peanut butter, and both sugars until light and fluffy.
- Add eggs and vanilla and mix to combine.
- Stir in the flour, salt, and baking powder. Mix until combined. Then fold in the peanut butter chips.
- Line a 9×13 inch pan with parchment paper. Spread the blondies into the pan evenly.
- Bake for 25-28 minutes or until blondies are set. Let cool for 10 minutes, then lift them from the pan and cut into 24 squares.
