- Bread – I like to use sourdough bread for this Boursin Egg Toast recipe. If you prefer another sturdy bread, that’s fine too!
- Butter – For toasting the bread and frying the eggs.

Boursin Egg Toast
Ingredients
- 2 slices sour dough bread
- 1 tablespoon butter, divided
- 2 eggs
- 2 tablespoons Garlic & Herb Boursin cheese
- ½ cup arugula
- ¼ cup cherry tomatoes, quartered
- Drizzle of balsamic glaze
- Salt and pepper, to taste
Instructions
- Heat a skillet over medium to medium high heat. Add ½ tablespoon of butter and spread around the skillet until it melts.
- Place the bread in the skillet and let brown on one side for 2-3 minutes or until toasty. Then flip and brown the other side, about 1-2 minutes. Remove from skillet.
- Turn the skillet to low, add the remaining tablespoon of butter. Crack the eggs in the skillet and cook to desired doneness.
- To assemble the toast, spread the top side of the sourdough bread each with Boursin cheese. Then add the egg. Top with arugula, tomatoes, and drizzle balsamic glaze. Add salt and pepper to taste.Serve immediately.
