Family Meal Plan
Monday
- Main Dish: BBQ Chicken Bake — With 10 minutes of prep and one dish, you’ll have the most delicious meal for your family!
- Side Dish:
- Green Bean Casserole — My family loves this classic, creamy, green bean casserole. Try it and maybe you’ll want to make it again during the holidays.
- Baked Macaroni and Cheese — I have shared my Grandma’s mac and cheese recipe a few times now and if you missed it, now it’s yours to enjoy. You don’t want to miss it!
Tuesday
- Main Dish: Honey Sriracha Meatballs — These meatballs have an Asian twist that we just can not get enough of!
- Side Dish:
- 15 Minute Chicken Fried Rice — Quick AND delicious!
- Rice — Serve your meatballs right on top of some jasmine rice.
- Asian Cucumber Salad w Ginger Soy Dressing — Zero cooking is required for this side dish, which also means less dishes!
Wednesday
- Main Dish: Sheet Pan Chicken Fajitas — One of my favorite one pan wonders! These have the delicious flavor of traditional fajitas, but are easy to whip up. Plus, the leftovers will be perfect for Friday night.
- Toppings:
- Pico de gallo
- Shredded lettuce
- Sour cream
- Guacamole
- Shredded cheese (in tex mex style fajitas)
- Flour tortillas
- Side Dish:
- Mexican rice — This rice is too good not to make!
- Crockpot Refried Beans — We love refried beans with our fajitas
Thursday
- Main Dish: Brown Butter Spinach Tortellini — This is the ultimate one pot EASY dinner!
- Side Dish:
- Garlic Bread — Garlic, herbs, and butter…what’s not to love? It is seriously irresistible.
- Tomato Mozzarella Salad — I love a fresh tomato salad! You can even make this salad a day in advance.
Friday
- Main Dish: Chicken Fajita Nachos — Use your leftovers from Wednesday – nachos get a bad rap, but there is so much goodness in these – protein, calcium, fiber and veggies!
- Toppings:
- Sour cream
- Pico de gallo
- Shredded lettuce
- Salsa
- Jalapeno Ranch (most popular addition in my house)
- Sliced jalapeños
- Side Dish:
- Crock Pot Black Beans — If you don’t have refried beans from Wednesday, try these.
- Guacamole — Serve this right on top of your yummy nachos.
- Dessert — Double Chocolate Pudding Cookie —These are incredibly delicious and it’ll taste like you just picked them up from a bakery.
Appetizer
- Homemade Salsa — I know it sounds intimidating, but I promise it is not once you see the recipe!
