Family Meal Plan
MONDAY
- Main Dish: Ground Beef Enchiladas – This kid-friendly dinner is perfect for a Monday night. I even share a tip for making sure your corn tortillas don’t fall to pieces when you’re rolling them. 😉
- Side Dish:
- Easy Mexican Rice – What compliments enchiladas more than yummy rice?
- Mexican-Style Crock Pot Refried Beans – Ok, maybe rice AND beans are what perfectly compliment these enchiladas!
TUESDAY
- Main Dish: Chicken Mozzarella Skillet — This is quick and easy to make and you only need a handful of ingredients in just one skillet!
- Side Dish:
- Roasted Vegetables— These are so quick and easy.
- Italian House Salad — This is great for all those times you need just a little something on the side.
WEDNESDAY
- Main Dish: Meatball Pasta Bake — Cheesy, saucy, and packed full of tender meatballs and pasta, this Meatball Pasta Bake is the ultimate family dinner!
- Side Dish:
- Brown Butter Broccoli— You’ll never look at broccoli the same after making it my families favorite way.
- Garlic Bread — I know it’s bold to say this is the best, but it kind of is! Something about the garlic spread just gets me every time!
THURSDAY
- Main Dish: Honey Garlic Chicken Thighs — Yummy chicken that cooks up quickly in a skillet and the sticky sauce is just so yummy and addicting!
- Side Dish:
- Side salad with Balsamic Vinaigrette — I usually do chopped romaine, tomato, cucumber, shredded parmesan, and croutons. The dressing takes 5 minutes to make and is irresistibly good!
- Cilantro lime rice, or a simple white or brown rice are all perfect for pairing with this meal.
FRIDAY
- Main dish: Rotisserie Chicken Salad — Start out with a store-bought rotisserie chicken and you’re basically done!
- Side Dish:
- Broccoli Slaw — My kids can never get enough of this. It has so much flavor.
- Potato Wedges – You can never go wrong with crispy, easy, potato wedges…especially on a Friday!
- Croissants, crackers, butter lettuce, or sliced bread — You can keep it extra easy by making this salad into sandwiches.
- Dessert – Peanut Butter Swirl Bars – A chewy delicious dessert bar that rarely lasts longer than a day.
APPETIZER
- Million Dollar Dip – With a name like this, you know it’s going to be good! Perfect for a party, or just for snacking.
