Family Meal Plan
MONDAY
- Main Dish: – Crustless Chicken Pot Pie– This EASY Crustless Chicken Pot Pie is the quickest way to a super cozy and delicious weeknight dinner! Made in just one skillet with tender chicken breast, lots of veggies, a creamy broth, and topped with buttery bread crumbs, this has all the flavor of classic homemade chicken pot pie, but is so much easier!!
- Side Dish:
- Mashed Potatoes– This is perfect to serve the chicken pot pie right on top of!
- Side salad– My easy go-to. I like mixed greens with a sprinkle of mozzarella, tomatoes, and this homemade ranch dressing (SO GOOD!!)
TUESDAY
- Main Dish: Sheet Pan Chicken Fajitas- These Sheet Pan Chicken Fajitas have all the delicious flavor of traditional fajitas, but are made QUICK and EASY just using one baking sheet! Serve them up traditionally in tortillas for taco Tuesday, or keep it light by serving over a bed of lettuce
- Side Dish:
- Set up- The traditional set up for Tex-Mex fajitas is tortillas, shredded lettuce, pico de gallo, sour cream, and guacamole.
- Rice & Beans– We like this Mexican rice and Refried Beans.
WEDNESDAY
- Main Dish: – Pepperoni Ravioli Lasagna– Layers of pasta, cheese, rich tomato sauce and flavorful pepperoni make this dish a family favorite, and with only 4 ingredients it couldn’t be more quick and easy! This one dish meal is super creamy and comforting, plus it bakes hands off – no babysitting required.
- Side Dish:
- Garlic Bread– This is our favorite recipe- the secret is in the spread.
- Perfect Roasted Vegetables– These are quick and easy, and the side dish I personally make more than any other!!
