Family Meal Plan
MONDAY
- Main Dish: Low Carb Creamy Garlic Parmesan Chicken– Whether you are eating low carb or not, this dish is DELICIOUS!! Bonus, it really only takes a few minutes to make.
- Side Dish:
- Zoodles – Buy them premade at the store in the produce or frozen section, or make them from scratch. I like to sauté them in olive oil, salt and pepper.
- Roasted Broccoli– You can bake this right beside the chicken to make life even easier!
TUESDAY
- Main Dish: Lasagna Stuffed Peppers– These are a great way to get lots of veggies in. If your kiddos won’t eat peppers (no judging here!) you can keep the meat separate for them and spoon it onto pasta or even make a little sandwich with it.
- Side Dish:
- Side Salad with Balsamic Dressing
- Pasta (try something like rotini or penne) tossed with olive oil and garlic salt.
WEDNESDAY
- Main Dish: Salsa Chicken– There isn’t an easier middle of the week meal! This salsa chicken can be from the fridge to the oven in as little as 5 minutes and you can even make extra so you can use the leftovers for an easy dinner on Friday!
- Side Dish:
- Rice- You can use simple white rice, or if you want to jazz it up, you can do a Mexican rice.
- Cheesy Ranch Beans– You can serve this as a dip or just a side dish!
THURSDAY
- Main Dish: Steak Fried Rice – I have had this dish on my mind lately so I grabbed this recipe to try!
- Side Dish:
- Asian Spicy Mayo– I LOVE to drizzle this sauce over fried rice. It seriously takes it to the next level!!
- Fortune Cookies- Okay… not quite a side, but pick some up at the store for a fun “take out” style meal at home and some laughs with the family as you read them.
FRIDAY
- Main Dish: Use the leftover Salsa Chicken from Wednesday and make some Baked Tostadas! If you don’t have leftovers, you can grab a rotisserie chicken and use the recipe as directed.
- Side Dish:
- Mexican Corn Salad
- Dessert – Favorite Snickerdoodles – I don’t have many Mexican dessert recipes, but these snickerdoodles hit the spot because the remind me of the flavor of churros. You can freeze the extras and pop them out whenever your sweet tooth hits!
