Family Meal Plan

Monday
- Main Dish: French Onion Meatballs – These feel a little different than the usual weeknight dinner in the best way. They’re hearty, full of flavor, and reheat beautifully so go ahead and plan on lunch being handled tomorrow.
- Side Dish:
- Side Salad with Balsamic Vinaigrette – If you’ve got five extra minutes, make the dressing from scratch. It’s worth it and you can use it again later in the week.
- Roasted Vegetable Medley – This is one of those easy sides you can throw on a pan and forget about until dinner is ready. Simple and always solid.
Tuesday
- Main Dish: Fiesta Chicken Salad – When you want something lighter but still filling enough to keep everyone happy, this is the move. It’s fresh, colorful, and still feels like a real dinner.
- Side Dish:
- Crockpot Refried Beans – Once you make these from scratch, it’s hard to go back to the canned version. They’re creamy and practically cook themselves.
- Mexican Roasted Veggies – Add these to the plate or pile them right on top of the salad for extra flavor and color. They make everything better!
Wednesday
- Main Dish: Crockpot Beef Stroganoff – Let the slow cooker do the work today. You’ll come home to a rich, comforting dinner that tastes like you worked way harder than you actually did.
- Side Dish:
- Roasted Broccoli – Crispy edges, simple seasoning, and it disappears fast every single time.
- Cheesy Garlic Bread – This one always gets attention at the table. Golden, melty, and gone before you know it.
Thursday
- Main Dish: Mexican Shredded Beef Bowls – Everything cooks in the crockpot and you end up with enough for tonight and leftovers to stretch into the weekend. Dinner feels easy when it’s already done for you!
- Side Dish:
- Mexican Rice or cauliflower rice – Spoon that slow cooked beef right over the top and dinner basically builds itself.
- Jalapeno Ranch – We put this on everything. It adds just enough kick and makes the bowls extra fun.
Friday
- Main Dish: Creamy Chicken and Rice Casserole – This is your one dish, scoop it onto plates, and call it done kind of dinner. Creamy, filling, and always a crowd pleaser.
- Side Dish:
- Bacon Broccoli Salad – A little sweet, a little salty, and just enough crunch to balance out the casserole.
- Garlic Bread – Because no one complains when garlic bread shows up twice in one week.
- Dessert – Peanut Butter Swirl Bars – These have been on repeat for years for a reason. Soft peanut butter base with that perfect chocolate swirl running through every bite.
Appetizer
- Buffalo Chicken Dip – Hot, cheesy, and guaranteed to disappear fast. Set it out and watch everyone hover around it.
