Monday
- Main Dish: Chicken Gyro Bowls – You’re going to love how fresh and easy these are and the family will actually eat their veggies.
- Side Dish:
- Mediterranean Chickpea Salad – Toss it together in minutes and it’s ready to brighten up the bowls.
- Garlic Bread – Soft, buttery, and always the first thing the kids grab…but I like to use it to scoop up every last bite!
Tuesday
- Main Dish: Chicken Parmesan Sliders – Cheesy, melty, and the perfect size for little hands to manage.
- Side Dish:
- Baked Potato Wedges – Crispy on the outside, soft on the inside, and easy to get on the table fast.
- Creamy Southern Coleslaw – Sweet, tangy, and my family actually asks for seconds! .
Wednesday
- Main Dish: Crockpot Pork Carnitas – Don’t skip the second step. This recipe is a repeat request here and makes leftovers that will shine on Friday.
- Side Dish:
- Mexican Street Corn Casserole – This takes 5 minutes to prep – it’s too easy and so full of flavor!
- Black Beans – So simple and so good. You’ll make them over and over.
Thursday
- Main Dish: Honey Sriracha Meatballs – Sweet, a tiny spicy, and everyone comes back for more.
- Side Dish:
- 15 Minute Chicken Fried Rice – Fast, flavorful, and full of good stuff.
- Cucumber Salad w Ginger Dressing – No cooking required and it adds the perfect fresh crunch.
Friday
- Main Dish: Carnitas Nachos – Use Wednesday’s leftovers and dinner is on the table in a flash. Kids and adults both will dig in….and this is my Friday kind of language!
- Side Dish:
- Spicy Jalapeno Ranch – Add a drizzle for some heat and extra flavor.
- Sautéed Peppers and Onions – Serve on the side or pile them on the nachos.
- Dessert – Churro Cheesecake Bars – Creamy and tangy with the best crunch from cinnamon sugar. You’ll make these again for sure!
Appetizer
- Jalapeno Poppers Chicken Sliders – Cheesy, bite-sized, and everyone fights over who gets the last one. Make them for Super Bowl!
