Monday
- Main Dish: Italian Baked Chicken – Crispy, quick, and a dinner everyone agrees on. Make extra so Wednesday dinner is already handled.
- Side Dish:
- Roasted Veggies – Toss, roast, done!
- Pasta with Homemade Marinara Sauce – Simple, cozy, and great for soaking up that extra sauce.
Tuesday
- Main Dish: Crockpot Tuscan Pot Roast – This is a “throw it in and look impressive later” kind of dinner. The slow cooker is absolutely carrying us.
- Side Dish:
- Creamy Mashed Potatoes – Our forever favorite go-to mashed potatoes. No notes.
- Crispy Brussels Sprouts – Even my kids eat these… which still surprises me! I think it’s the perfect crisp.
Wednesday
- Main Dish: Caesar Salad Sandwiches – Leftovers from Monday doing their job.
- Side Dish:
- Broccoli Cheese Soup – Cozy, filling, and perfect for a busy night – y’all loved this from the moment I shared it!
- Italian House Salad – Because we have to have some balance 😉
Thursday
- Main Dish: Brown Butter Tortellini with Spinach – Meatless, fast, and feels a little fancy without extra work.
- Side Dish:
- Cheesy Pesto Bread – The side that makes everyone think you went above and beyond.
- Antipasto Salad – Great if you want a little extra protein without cooking more.
Friday
- Main Dish: Oven Baked Salsa Chicken – Four ingredients, five minutes of prep, and dinner is handled!
- Side Dish:
- Sautéed Peppers and Onions – Keep it simple with this easy, no fuss side.
- Easy Mexican Rice – Can’t think of anything better to serve with salsa chicken!
- Dessert – Oatmeal Cranberry Cookies – A hearty, wintery cookie that has the best texture – great for December!
Appetizer
- Baked BBQ Chicken Drumsticks – Easy to prep, easy to eat, and great for snacking or a casual night!
