Monday
- Main Dish: Garlic Pork Peanut Noodles – A fast, flavor-packed dinner that feels a little fun but still totally doable on a busy night. This one disappears fast at our house!
- Side Dish:
- Sauteed Peppers & Onions – Simple, quick, and they soak up all that garlicky peanut goodness.
- Asian Cucumber Salad – Cool and crunchy, which makes it the perfect balance to the noodles. I love making this ahead so it’s ready to grab.
Tuesday
- Main Dish: Italian Ground Beef & Rice Casserole – This is one of those easy dinners that just works. Cozy, filling, and made with homemade Italian seasonings you probably already have.
- Side Dish:
- Sheet Pan Roasted Veggies – Toss them on a pan and let the oven do the work while you handle everything else.
- Garlic Bread – Always a good idea, especially when there’s rice casserole involved.
Wednesday
- Main Dish: Sheet Pan Steak Fajitas – I love the idea of doing something fun and hands-off on Christmas Eve. Everything cooks on one pan, which means less cleanup and more time with your people.
- Side Dish:
- Mexican Rice – Tastes like it came from your favorite restaurant and makes fajita night feel extra special.
- Mexican Caesar Salad – Cool, creamy, and crunchy. It’s the perfect balance to the sizzling fajitas.
- Tip for the week: This is a great time to bake my One Bowl Banana Bread ahead of time. It’s so good on Christmas morning, afternoon snacking, or when everyone needs “just a little something” after opening presents tomorrow.
Thursday
- Main Dish: Honey Glazed Ham – A classic Christmas dinner that’s family-friendly and way easier than it looks. This one always gets rave reviews.
- Side Dish:
- Jiffy Corn Casserole – A holiday staple for a reason. Don’t miss the make-ahead tips to keep Christmas Day stress low.

Appetizer
- Spinach and Artichoke Dip – A guaranteed crowd-pleaser and always a good idea when family is coming and going all day.
