Meal Plan – Week 346

Monday
- Main Dish: Quick Skillet Pot Pie – When I first shared this, my inbox exploded with messages asking for the recipe. If you still have leftover turkey hanging around, this is the perfect way to use it. Since it cooks right in the skillet and skips the crust, it comes together fast and feels like the coziest shortcut ever.
- Side Dish:
- Homemade Bisquick Biscuits – Since the pot pie is crustless, biscuits are the perfect match. And once you see how easy these are, you’ll start keeping the mix on hand for pancakes and other quick breakfasts.
- Roasted Vegetables – These roast up in about the same time the pot pie cooks, so dinner hits the table without any juggling.
Tuesday
- Main Dish: Baked Meatballs Parmesan – This one has been a reader favorite for years. It’s comforting, simple, and the kind of dinner the kids love as much as the adults.
- Side Dish:
- Garlic Bread – Because garlic bread just makes everything better.
- Side Salad with Creamy Italian Dressing – My all-time favorite dressing. It tastes a lot like Olive Garden’s creamy Italian and makes even a simple salad feel special.
Wednesday
- Main Dish: Zesty Crockpot BBQ Pulled Pork – This slow cooker pork cooks down into the most tender, juicy pulled pork with a tangy barbecue kick. Serve it on buns, over salads, in wraps, in rice bowls… whatever fits your family’s vibe that night.
- Side Dish:
- 3 minute Instant Pot Corn – I never want corn any other way. It comes out crisp-tender and so flavorful, especially with the garlic butter sauce. Truly the BEST CORN EVER.
- Buns – The kids love theirs piled on soft buns. I usually layer mine over chopped romaine for a lighter option.
Thursday
- Main Dish: Meatball Subs – Use Tuesday’s leftovers and dinner basically makes itself. Warm, saucy, cheesy… it’s always a win.
- Side Dish:
- Baked Potato Wedges – Quick to prep and a guaranteed kid favorite.
- Broccoli Cauliflower Salad – A great way to sneak in a few extra veggies, and it’s surprisingly addictive.
Friday
- Main Dish: Crispy Panko Chicken with Honey Drizzle – This baked chicken comes out shockingly crisp for how easy it is. Juicy inside, crunchy outside, and the honey drizzle makes it feel a little extra without any work.
- Side Dish:
- Best EVER Corn Casserole – Because you didn’t get enough for Thanksgiving last week!
- Garlic Smashed Potatoes – Oven-baked, garlicky, and they give serious french-fry energy.
- Dessert – Fudge Brownies – Hands down the best brownies I’ve ever made. I’m asked to bring these to every gathering and they disappear fast.
Appetizer
- Cajun Chicken Dip – My friends basically assign me this every time there’s a party. Hot, creamy, cheesy, and loaded with chicken… it always gets devoured.
