Family Meal Plan
Meal Plan – Week 341

Monday
- Main Dish: Baked Tomato Ricotta Pasta – Creamy, cheesy, and baked to bubbly perfection – it’s a meatless meal that is totally filling and satisfying!
- Side Dish:
- Garlic Bread – Warm, buttery, and perfect for scooping up the yummy sauce.
- Italian House Salad – A restaurant classic made right at home – fresh, crisp, and brings balance to all that cheesy goodness.
Tuesday
- Main Dish: Cowboy Baked Beans w Ground Beef – This one’s hearty, flavorful, and total comfort food. My family calls it “the clean-plate dinner”.
- Side Dish:
- Buttermilk Cornbread – Slightly sweet and extra fluffy, great for soaking up those saucy beans.
- Baked Potatoes – These are ready in 30 minutes if you use your pressure cooker and they are incredibly fluffy!
Wednesday
- Main Dish: Crockpot Honey BBQ Ribs – Did you know you can make ribs in the crockpot?! I know, it blew my mind, too. Sticky, sweet, and fall-apart tender – the slow cooker does all the work, and the family thinks you’re a hero.
- Side Dish:
- Sautéed Green Beans – Simple, quick, and one side dish my kids never complain about.
- Southern Squash Casserole – This is so good that you’ll forget you’re even eating veggies!
Thursday
- Main Dish: Creamy Chicken Tortilla Soup – A cozy, creamy twist on taco night that’s big on flavor and easy on effort.
- Side Dish:
- Mexican Roasted Vegetables – Toss them in a pan and let the oven do its thing.
- Mexican Corn Salad – Light, fresh, and the perfect cool side to balance the soup.
- Toppings – Shredded cheese, crushed tortilla chips or tortilla strips, cilantro, lime juice, pickled jalapeños, diced tomatoes, red onions, sliced avocados, or pico de gallo. Load it up however your family loves it!
Friday
- Main Dish: Ginger Sesame Ground Chicken Stir Fry – Top 3 things I love about this – easy, kid-friendly and one pan. One pan meals are my favorite!
- Side Dish:
- Sriracha Slaw – Adds a little crunch and just enough kick to make dinner fun.
- Steamed Rice – White or brown rice would be great to soak up the stir fry sauce. Quinoa would also work.
- Asian Cucumber Salad – Make it ahead, and dinner practically serves itself.
- Dessert — 3 Ingredient Nutella Brownie – These brownies seriously only need 3 ingredients. I’ve dubbed them “magical brownies”!
Appetizer
- Black Bean and Corn Salsa – Fresh, zesty, and gone in minutes. I make this every time we need a quick snack or game-day bite, and it always disappears fast.
