Family Meal Plan

Monday
- Main Dish: Crockpot Street Corn Chicken – You asked, I listened! So many of you have been begging for a slow cooker version of my oven-baked favorite and here it is. All the creamy, cheesy street corn flavor you love, now in an easy dump-and-go crockpot dinner!
- Side Dish:
- Cilantro Lime Rice – Fresh, zesty, and the perfect base to soak up all that sauce.
- Mexican Cornbread – This is the kind of side that disappears before the plates are cleared.
Tuesday
- Main Dish: Baked Italian Chicken and Peppers – This one-pan dinner is always a hit! Juicy chicken, sweet bell peppers, and a light Italian tomato sauce… it’s an easy weeknight win and you should definitely save leftovers for Thursday’s dinner.
- Side Dish:
- Side Salad with Creamy Italian Dressing – My homemade dressing takes this simple salad to the next level!
- Garlic Bread – Because no one ever complains when there’s bread on the table.
Wednesday
- Main Dish: Sheet Pan Roasted Veggie Soup – This silky-smooth soup is my sneaky way of getting extra veggies into dinner – and the kids don’t even notice. Roasting the veggies first gives it that rich, cozy flavor that feels like it simmered all day (but it didn’t 😉).
- Side Dish:
- Beef Brisket Grilled Cheese Sandwich – Melty, hearty, and the ultimate soup dunker.
- Greek Ground Chicken Pitas – Light, flavorful, and a fun change from the usual soup and sandwich combo.
Thursday
- Main Dish: Chicken and Peppers Pasta Casserole – Chop up your leftovers from Tuesday and mix with cooked pasta (I like penne or rotini.) Add chopped pepperoni and black olives . Stir in additional marinara if needed. Dollop with ricotta cheese, then top with Italian blend cheese and bake for 25-30 minutes or until everything is heated through.
- Side Dish:
- Roasted Green Beans with Parmesan – Toss them on a sheet pan and let the oven do the work. I love a little sprinkle of cheese on my veggies!
- Tomato Basil Mozzarella Salad – Ok, but the best thing to do for kids is to put the cherry tomatoes, mozzarella, and basil on a stick = my kids and their friends eat them every time!
Friday
- Main Dish: Bacon Cheeseburger and Rice Casserole – All the flavors of a bacon cheeseburger baked into a family-friendly casserole. We can’t get enough of this!
- Side Dish:
- Fruit Salad – The easiest “basically no recipe” side dish ever.
- Corn on the Cob with garlic butter – Gotta get all the crispy corn in while it’s still summer!
- Dessert – Churro Cheesecake Bars – These are rich, sweet, and have that “just one more bite” magic that gets my waistband in trouble!
Appetizer
- Broccoli Cauliflower Salad – This has the most delicious sweet but a little tangy flavor. You can serve this as an appetizer or even have it as a light meal.
