Family Meal Plan

Monday
- Main Dish: Cheesy Mexican Chicken and Rice – WOW! This is so good, you guys! It’s a one pot meal and takes just 15 minutes to prep.
- Side Dish:
- Crock Pot Refried Beans – A classic Mexican side dish that gives you rich, creamy, delicious beans.
- Mexican Caesar Salad – We LOVE this salad – the textures are fantastic and the dressing is one that I make extra of because it’s so yummy.
Tuesday
- Main Dish: Baked Chicken Shawarma Bites – This dish is inspired by a Middle Eastern street food. Your kitchen will smell incredible when you’re making this, but dinner will taste even better!
- Side Dish:
- Mediterranean Chickpea Salad – You can serve this as an appetizer before dinner, or as a side dish. I love having it as a side! It’s very filling because it’s packed with garbanzo beans, zucchini, pepper, tomatoes and toped with feta cheese. It’s great the next day, too!
- Lemon Rice – I love how versatile lemon rice it – it complements the shawarma bites perfectly.
Wednesday
- Main Dish: Asian Style Honey Chicken Thighs – Juicy, super flavorful chicken that cooks up quickly in a skillet. The sticky sauce is addicting!
- Side Dish:
- Side salad with Balsamic Vinaigrette – My favorite side salad is with crispy romaine, tomato, cucumber, parmesan, and homemade croutons. The dressing takes 5 minutes to make and is great!
- Rice – White or brown
- Garlic Green Beans – These are super quick and made in a skillet for less dishes. My kids can’t get enough of these!
Thursday
- Main Dish: Meatball Parmesan Sliders – You basically assemble and bake this recipe – it’s a combo of a meatball sub, a slider sandwich and my super popular meatballs parmesan recipe. It’s perfect for a busy night!
- Side Dish:
- Baked Potato Wedges – French fry vibes with less guilt!
- Tomato Mozzarella Salad – This salad is fast, delicious, and saves well if you have leftovers.
Friday
- Main Dish: Garlic Herb Steak – Did you know you can have a restaurant quality steak in 15 minutes?! Just make sure you read my tips before you start cooking!
- Side Dish:
- Garlic Mashed Potatoes – Garlic, herbs and butter…what’s not to love?
- Sauteed Mushrooms and Garlic – Quick and easy to make, and the flavor says “did these come from a gourmet chef?!”.
- Dessert – Peanut Butter Pretzel Bars – Give me PB, chocolate and pretzels any day of the week and I will be happy!
Appetizer
- Honey-Whipped Feta Dip – Serve this with some crackers, pita chips or even some crunchy veggies for the most delicious appetizer.
