Family Meal Plan

Monday
- Main Dish: Honey BBQ Chicken Bites – The flavor of this chicken is super family-friendly. If you need to, make extra for our bowls we’re making on Wednesday!
- Side Dish:
- Easy Buttermilk Cornbread – This is THE best cornbread recipe! Make sure to read the full recipe so you see my tips to get exactly this.
- Creamy Southern Coleslaw – The coleslaw really brings home the Southern BBQ flavors. It’s great as a side dish and and very quickly comes together.
Tuesday
- Main Dish: Mexican Style Chicken Thighs – Have you ever cooked with chicken thighs? They always turn out tender, juicy and delicious! These are perfect for eating on their own or adding to tacos or burritos.
- Side Dish:
- Mexican Corn Salad – We can never get enough corn in the summertime. This dish might be quick and easy, but it’s also sweet, tangy and always a hit!
- Cilantro Lime Pasta Salad – The dressing that coats the noodles is ⭐️⭐️⭐️⭐️⭐️ and when all the ingredients are put together I ask myself “why don’t I make this every week?!”
Wednesday
- Main Dish: Honey BBQ Chicken Bowls – Tonight’s meal is super quick because you already have the chicken from Monday’s leftovers! My family really enjoys “bowl” nights because they have fun assembling their own.
- Side Dish:
- Cilantro Lime Rice – Add this to a bowl and then your warm chicken bites.
- Avocado Corn Salsa – I like to add this right onto my bowl, but some people in my family prefer it on the side with some chips. Do whatever your heart desires!
- More Toppings Ideas: A drizzle of jalapeno ranch dressing is a must, fresh shredded lettuce, pickled red onions, and black beans.
Thursday
- Main Dish: Cheesy Grits with Eggs – Y’all know we’re fans of breakfast for dinner, but if you aren’t then go ahead and make this for breakfast. You could even make this as an early, hearty lunch. This is a one pan, ultra comforting meal and I can’t wait for you to try!
- Side Dish:
- Crispy Bacon in the Oven – This method gives you PERFECTLY crisp bacon every single time.
- Summer Fruit Salad – Whether you have this meal earlier or later in the day, a fruit salad always works as a side dish.
Friday
- Main Dish: Roast Beef Sliders – With tender deli meat, smokey provolone cheese, Hawaiian rolls, tangy horseradish sauce and a rich buttery topping, these sliders are over the top delicious!
- Side Dish:
- Quick Green Beans – I share 5 flavor options for this recipe. The roasted green beans with bacon is definitely my favorite to pair with the roast beef sliders.
- Mashed Potatoes – This will forever and always be my go to mashed potato recipe. They’re garlicky potato perfection.
- Dessert – Fudge Brownies – If you are a chocolate lover, you have to make these ASAP!
Appetizer
- Cheddar Bay Sausage Balls – 3 simple ingredients and you have a crowd pleasing appetizer that’s a winner for any potluck or even just a lazy family weekend.
