Family Meal Plan

Monday
- Main Dish: Creamy Chicken Pillows – I love recipes that taste gourmet, but actually took little effort because 1. the recipe is already easy and 2. some mom hacks helped you out. You will have this dish on the table in no time especially if you pick up a rotisserie chicken and shred it ahead of time.
- Side Dish:
- Cucumber Tomato Salad – I love this light summer salad – you can make it ahead and the flavors are even better!
- Brown Butter Broccoli – This is a family winner.
Tuesday
- Main Dish: Mexican Chicken Bake – I have shared a ton of recipes over the years, but my chicken bakes (and my cookies!) are kind of what put me on the map. This chicken bake is so simple, only has 6 ingredients and is just what you need on a busy weeknight.
- Side Dish:
- Cornbread – Still the same perfectly fluffy cornbread, but made with just a little extra to give it that Mexican kick!
- Street Corn Casserole – Every time I make this people want the recipe! Melissa said “Amazing. Made this for a side at our Ladies Mexican Night dinner. It was scraped from the dish and not one kernel of corn was left!!!”
Wednesday
- Main Dish: Chicken Tender Salad – This salad is one of those easy recipes that everyone loves. It’s a great way to get those veggies in, but with the added protein of the chicken tenders, cheese, bacon etc. You don’t even really need a side, but I’ll share a couple so you can stretch out this meal.
- Side Dish:
- Cowboy Baked Beans – These are a little bit sweet, a lot savory and packed with protein.
- Baked Wedge Fries – Make this the ultimate girl dinner with fries! Except you don’t have to feel guilty eating fries because they’re baked and you’re having them alongside a salad. Shhh!
Thursday
- Main Dish: Baked Tortellini – This is one of the most versatile recipes I have on my website. You can also use Seasoned Ground Turkey in this recipe if you don’t have beef on hand. I also like to sneak veggies into it like spinach.
- Side Dish:
- Famous Garlic Bread – This is a tried and true classic and you need it to soak up all the sauce from the tortellini!
- Parmesan Roasted Cauliflower – This roasted cauliflower is savory and perfect to round out your dinner.
Friday
- Main Dish: Cheeseburger Sliders – Nothing says “4th of July” or “America” like a cheeseburger! These are even more family and crowd friendly because they’re bite-sized though. These are packed with ground beef, layers of cheese, and burger toppings that you can customize for your everyone.
- Side Dish:
- Baked Mac and Cheese – My grandma’s recipe has never failed me!
- Veggies and Dips – I never met a veggie that didn’t like my homemade ranch, blue cheese, or creamy Italian dressing. I use whatever I have on hand like carrot sticks, celery, tomatoes, snap peas, bell peppers etc.
- Dessert – Chocolate Chip Cookies – Everyone loves this classic cookie and it’s a great one to make for the 4th of July. My other crowd favorites are my key lime cookies and sprinkle cookies (use red, white and blue sprinkles).
Appetizer
- Slow Cooker Garlic Parmesan Wings – These are so good you may not want to share, but they’re always a hit at potlucks!
- Million Dollar Dip – The flavor in this dip is unreal! It’s hard to believe it only takes a few minutes.
