Family Meal Plan

Monday
- Main Dish: Chicken Cordon Bleu Bake – We love a traditional chicken cordon bleu, but this casserole version is the only way I’ll make it now because it’s so much easier. And it is just as flavorful so you have no complaints!
- Side Dish:
- Tortellini Salad – This is easy enough to throw together the night of, but you can prep it ahead of time if it will make your night easier.
- Herb Roasted Potatoes – These are probably going to be your new go-to side dish! They go with practically every main dish.
Tuesday
- Main Dish: Baked Chicken Spaghetti – Do you have nights when you just do not want to cook? Here is your answer – Just 10 minutes to prep this kid friendly dinner that is DELICIOUS!
- Side Dish:
- The Best Garlic Bread – Perfectly toasted and my secret ingredient makes it 5 stars!
- Kale Salad – A piece of garlic bread and a crisp salad are both meant to be eaten with baked chicken spaghetti. It’s like the trifecta of delicious dishes.
Wednesday
- Main Dish: Southwest Beef Fried Tacos – Tacos with juicy ground beef and melty cheese is made even better by being fried. Shake up taco night with these!
- Side Dish:
- Mexican Corn Salad – Sweet, tangy, quick and easy – I love the flavors in this side dish because they’re so tasty, but also because this dish just says SUMMER! to me.
- Crock Pot Refried Beans – Some say these delicious, flavorful and creamy beans are even better than your favorite Mexican restaurant. I’ll let you be the judge though!
Thursday
- Main Dish: Chicken Enchilada Casserole – My favorite thing to do when I make this is to buy a rotisserie chicken and shred it. It makes prep even faster.
- Side Dish:
- Cilantro Lime Rice – This actually might taste better than Chipotle!
- Sautéed Peppers and Onions – You can serve these as a side or use as an extra topping for a little crunch.
Friday
- Main dish: Crock Pot BBQ Brisket – I’m from Texas so I know good BBQ – you can use your favorite BBQ sauce but I prefer my easy homemade BBQ sauce. A brisket in the crock pot doesn’t get much easier!
- Side Dish:
- Coleslaw – This recipe is my favorite, but if you want to spice it up, try something like this Sriracha Coleslaw. Both are great side dishes for a brisket.
- Cowboy Baked Beans – Hearty, quick and so yummy.
- Dessert – Caramel Snickerdoodles – The caramel makes these snickerdoodles even more irresistible than you can imagine!
Appetizer
- Caramelized Onion Dip – Use my recipe for crockpot onions and then blend 2 cups of them with 16 oz sour cream. It’s the easiest dip to make – just serve with potato chips and enjoy them poolside.
