Family Meal Plan
– Week 321

Monday
- Main Dish: Bruschetta Chicken – This recipe can be prepped and into the oven in about 15 minutes so it is the perfect quick and wholesome dish for a busy weeknight.
- Side Dish:
- Italian House Salad – Great as a side dish – I also like to make some extra salad because the leftover, cold bruschetta chicken right on top is 5 stars.
- Crispy Garlic Bread – This has the perfect amount of garlic, herbs, and butter to make this toasty bread irresistible!
Tuesday
- Main Dish: Crockpot Pork Chile Verde – Dinners in the slow cooker are my favorite, especially in the summertime. All you need are about 10 minutes to make this and you’ll have everyone at the table wanting seconds. *Save leftovers for Friday. It’s a foolproof recipe!*
- Side Dish:
- Mexican Caesar Salad – Sometimes even a salad seems like a lot of work, but this is a quick 15 minute salad that you’ll be making all summer long!
- Cilantro Lime Rice – I like to put my pork right on top of this Chipotle inspired rice.
Wednesday
- Main Dish: Baked Pesto Chicken – A delicious meal that uses only 6 ingredients and you won’t believe how good it tastes. Also, it’s a one dish meal so you’ll have less cleanup tonight!
- Side Dish:
- Green Beans – Keep dinner easy by sticking with a classic. These green beans are the perfect side dish.
- Tomato Mozzarella Salad – You can make this earlier in the week if you have time – it’s even better because the flavors marinade together when you make it ahead of time.
Thursday
- Main Dish: Ground Turkey Stir Fry – Even the pickiest eaters enjoys this meal!
- Side Dish:
- Asian Cucumber Salad – Another make ahead side dish! Work smarter, not harder.
- Yum Yum Sauce or Spicy Mayo – If you like spicy I suggest the mayo and for the non spice lovers I suggest the yum yum sauce. Both of them are simple to make.
Friday
- Main dish: Chile Verde Nachos – Top tortilla chips with your leftovers, cheese, and any other nacho toppings you like. Bake at 350°F for about 10 minutes, until melty and warm. Top with sour cream, salsa, and guacamole.
- Side Dish:
- Guacamole – Transform your leftover pork chile verde by topping it with table side guacamole. Yum!
- Borracho Beans – Evenly spread out some of these creamy pinto beans to add even more protein and less nacho guilt.
- Dessert – Cookies and Cream Rice Krispie Treats – These might be the most delicious Rice Krispie treats you will EVER make. I actually suggested to my kids that they should do a lemonade stand and also sell these because WOW!
Appetizer
- Greek Layer Dip – This hearty appetizer is so good that you could probably just eat it as a meal!
