Family Meal Plan

Monday
- Main Dish: Chicken Piccata – I love starting the week off with a hearty dish that is also super easy to make and this one is just that. One pan, ingredients you probably already have on hand and just 30 minutes to have this dish on the table.
- Side Dish:
- Green salad – Top with cucumbers, tomatoes, croutons, and my creamy parmesan dressing.
- Easy Mashed Potatoes – These extra creamy mashed potatoes are great for soaking up the sauce!
Tuesday
- Main Dish: Mexican Street Corn Chicken Salad – Chicken salad and Mexican corn got married and made the most delicious salad! This is one of those meals that’s great for dinner and even better for lunch the next day. *tip – use a store-bought rotisserie chicken or plan ahead and make your own with this crock pot rotisserie chicken recipe.
- Side Dish:
- Mexican Roasted Vegetables – Veggies that are quick to make and taste delicious.
- Oven-Baked Potato Wedges – Cut, toss, and bake… doesn’t get much easier than that!
Wednesday
- Main Dish: Creamy Pesto Tortellini – Another one pan recipe that is a WINNER – and takes 20 minutes to throw together and get onto your table. It’s such a decadent dinner that it’s hard to believe how quickly it comes together.
- Side Dish:
- No Knead Rolls – Whip up some homemade rolls without any rise time needed. They’re easy, promise.
- Mushrooms with Garlic Butter – You can add these right on top of your pasta and will have zero regrets. They’re super tender, sautéed mushrooms that melt in your mouth.
Thursday
- Main Dish: Guacamole Chicken – My family loves this dish, but if you have picky eaters that don’t like guacamole you can just leave it off their chicken because you add it at the end.
- Side Dish:
- Crockpot Black Beans – This dump and go recipe creates beans that are SO flavorful.
- Tex-Mex Rice – Tastes like a Mexican restaurant!
Friday
- Main dish: BBQ Chicken Casserole – If you have leftover chicken, a rotisserie chicken or any pulled chicken it’s great for this recipe and will make it come together even quicker. It is perfect for eating with a fork out of a bowl, or piling on top of chips for a hands only meal!
- Side Dish:
- Bacon Ranch Broccoli Salad – This kid-approved salad has some BIG flavor and it can be made ahead. I always like to make this on a Friday so I can grab this salad for an easy weekend lunch.
- Super Easy Cornbread – This cornbread is the most tender, moist cornbread you will ever have! My trick works every time.
- Dessert – No Bake Cookies – This fast cookie recipe is always my go-to when I have a chocolate craving, The oatmeal and peanut butter make this cookie rich and hearty.
Appetizer
- Cajun Chicken Dip – If you need to bring a dish somewhere this weekend, this is guaranteed to get at least a few recipe requests!
