Meal Plan – Week 318

Monday
- Main Dish: Honey BBQ Chicken Bites — This family-friendly dish is out of this world delicious! Chicken bites are crazy fast to make and so versatile which is why I love them so much – if you’ve been around here you’ve probably tried others (my juicy chicken bites are a major favorite!). I can’t wait for you to make this new version!
- Side Dish:
- Homemade Buttermilk Cornbread — You might think I’m biased but this is actually THE best cornbread recipe!
- Creamy Southern Coleslaw — I love a tasty Southern side dish with anything barbequey. This one hits the spots.
Tuesday
- Main Dish: Mexican Shredded Beef — Let your crockpot be your secret hero today. When it’s time to eat just serve over rice, or add it to burritos, tacos, or enchiladas. This beef is also great to make for meal prep or for the freezer to serve up later.
- Side Dish:
- Sautéed Peppers and Onions — You can serve these as a side or use as an extra topping for a little crunch.
- Easy Tortillas — Tortillas are so much easier than you think. And you can make extras to save for later.
- Cilantro Lime Pasta Salad — When I start making this as a side dish you know Spring has arrived. This salad is always a favorite of ours when it’s warm out.
Wednesday
- Main Dish: Monterey Chicken Bake — Chicken bakes are the best one dish dinners! This recipe only needs 6 ingredients and is so tasty. You can get it all prepped and into the oven in minutes!
- Side Dish:
- Cucumber Tomato Salad — Perfect as a side tonight, but make extra for tomorrow so you can have it for lunch.
- Baked Asparagus — Roasting veggies is my go-to method. It brings out the best flavor and this baked asparagus couldn’t get any easier.
Thursday
- Main Dish: Chicken Tender Wraps — 10 minutes to make a tasty dinner? Yes, please!
- Side Dish:
- Parmesan-Roasted Cauliflower — This side is savory and a great way to round out dinner.
- 4 Bean Curry Quinoa Salad — Another summer favorite! It is packed with flavor and so easy to make! I think the flavors are even better the next day for lunch!
Friday
- Main Dish: One Pan Teriyaki Beef and Rice — This meal is delicious and even quicker than take out on Friday night!
- Side Dish:
- Yum Yum Sauce — This dish was made for a drizzle of sauce on top of the teriyaki. My kids LOVE this sauce.
- Sriracha Slaw — A great addition for the grown ups who like a little kick!
- Dessert: Peanut Butter Swirl Bars — These delicious bars are the perfect combination of peanut butter and chocolate in a perfectly tasty cookie bar.
Appetizer
- Italian Tortellini Salad — This is perfect to start any meal. It is a hearty salad filled with tender tortellini, veggies, and an irresistible dressing.
